I always forget to come back and rate recipes, however, this one is too good to forget! This recipe is so simple and deeeelish! I didn't adjust anything except, I added about 1/2 c of chopped walnuts.
This will be my 'go to' banana bread recipe from now on. I will play with it though... adding pineapple one time, maybe lime juice and peel another, maybe rum, maybe coconut. Heck, I wonder if I can get all those into one bread?!
However, the recipe IS perfect as is. Thank you Shelley Albeluhn.
*** So I just made this for the second time. I cut the sugar down to 1/4 cup of coconut sugar. I didn't measure the bananas; I used 5 speckled ones. Instead of butter I used coconut oil. Again I added walnuts.. a whole cupful. And here's the biggie: I used gluten-free flour! This was the first time I have ever baked with it. I made 17 good sized muffins. If I could give the recipe another 5 stars I gladly would. FANtastic once again!
