Spinach Enchiladas Verde

Made a few changes in that we used low fat yogurt instead of sour cream and added some shredded roasted chicken in with the spinach. It was fantastic! The flavors blend perfectly, the Salsa Verde and the yogurt made a delicious sauce. We did not roll our enchiladas but stacked them instead in a round casserole dish and in the order of tortilla, sauce, spinach, chicken, cheese and repeat. Then poured the remaining sauce on the top of the last tortilla and added the remaining cheese. It's much faster to prepare that way and doesn't take away from the taste of the dish in anyway. This recipe is a keeper, thanks for sharing it!

Simple Chicken Parmesan

Simply Delicious and So Easy to make. I also added about a third cup of Parmesan to the mozzarella, tbsp of Italian seasoning and sprinkle of garlic salt. My Husband raved about it. I can't wait to make it again. Thanks for sharing!

Greek Garlic-Lemon Potatoes

This dish is so flavorful! And the garlic and lemon compliment each other perfectly without over powering one another. I did use only olive oil instead of vegetable oil & olive oil but other than that I didn't change a thing. I stirred every 30 minutes and added a half cup of additional water twice in the first hour. The potatoes browned perfectly. This one is a keeper, thanks for sharing it.

Coconut-Avocado Ice Cream

We used half & half instead of milk, added a teaspoon of vanilla and shredded coconut. This ice cream is so refreshing and creamy. Probably the creamiest ice cream I have ever had. The color is a very pretty pale green. Outstanding recipe!!! Thank you for sharing it.

Figs with Goat Cheese, Pecans and Bacon

This recipe is great with dried dates. I made it last Spring before figs were in season. But last week I tried it with figs and it was a disappointment. In fact we each ate one and threw the rest out. So great concept but dates work so much better.

Portuguese Soup

I have to admit, I was a little scared of this recipe but intrigued by the ingredients. I even called my girlfriend (who is of Portuguese decent) to make sure the ingredients sounded cohesive. The only changes I made was to use Chorizo instead of smoked sausage (make sure to drain the Chorizo after you cook it) and I used beef broth instead of water & I reserves 1/4 of the cabbage and didn't add it until the last 15 minutes of cooking so it had some crunch to it. The first 2 bites I thought 'Oh my goodness this was a mistake' and then on the 3rd bite it was like it all came together and it was amazing! Each bite got better and better. It just takes getting use to the uniqueness of the ingredients but it is so worth it. This will be a perfect dish to make in the Winter. I served mine with a garden salad and a crusty French bread. Thank you for sharing the recipe. It will be made in our house over and over.

Scrapple

Being from Texas, We had no idea what Scrapple was suppose to taste like but had seen it on a cooking show and so we thought why not give it a try. We loved it. Especially the sweetness from the condensed milk with the other flavors. I sliced it fairly thin and we preferred it fried crispy like bacon.

Appetizer Mussels

This is a superb dish !!! We loved it so much that the next time I made it, I had to double the recipe. Serve with a baguette bread to soak up every delicious drop of the sauce. It's easy to prepare and the taste is out of this world.

Lemon Carrots and Rutabaga

This is just an awesome awesome dish. Easy to prepare and the results were excellent. If you have never tried rutabagas this is a great dish to start with and if you are a long time fan of the vegetable well this is a great twist eating them.

Dave's Low Country Boil

This is a terrific, fun & easy meal to prepare. It had everyone talking as we presented it to the table. I put down newspaper to cover the table but I also used those cardboard box bottoms from the grocery store that hold the can goods on the shelves. Everyone filled up their "box plate" and it also served to contain the shells and cobs as they ate them. It made clean up very easy. I did also add a bag of crab boil to kick up the spiciness. And the warning about eating too much is true! I made this for Christmas Eve and everyone ate so much they couldn't move after dinner.

Texas Slaw

This recipe takes slaw to a whole new level. I was a little skeptical about the ingredients but decided to give it a try and I am so glad I did. It went prefectly with our barbequed ribs and chicken. Yum Yum!

Home Style Macaroni and Cheese

I have been looking for 20 years for the perfect Mac-n-Cheese recipe and I have finally found it!! It was just the perfect blend of noodles and cheese and not too dry or too creamy. I used half regular milk and half evaporative milk. The only thing I will do different next time is to not add the bread crumbs as that is not something we were particularly crazy about but the recipe overall is a true winner.

Easy Slow Cooker French Dip

It just doesn't get any easier or yummier than this! What a awesome recipe. I put it on at lunch yesterday and when I got home from work I could smell that heavenly aroma as I got out of the car. I added a dash of Worcestershire along with what the recipe called for except I used dry onion soup mix and a can of water. I did let the meat set for 20 minutes on the cutting board before slicing (It was very tender) and while the meat was resting I took the Au Jus and put it on the stove top and cooked at a hard boil for about 15 minutes to condense the flavors. This recipe is going to be used over and over in our house. It's simply fantastic.

French Onion Soup Gratinee

I'm sorry and I do appreciate you sharing the recipe but we were very disappointed in it. I had a difficult time getting the onions to carmelize and then realized maybe I shouldn't have used grey salt for that. What I thought would be a fairly easy dish to prepare ended up taking 3 times as long to make and the ending was nothing like we expected. I ending up throwing the rest of it away. We both love French onion soup but this just wasn't the recipe for us.
