Turkey and Quinoa Meatloaf

WOW this is a great recipe. I wish I could give it 10 stars! We have never really liked the taste of ground turkey before but thought I would give it a try. This dish taste like Beef! My husband said it was actually better than my old beef meatloaf recipe that he had raved about for 25 years. I added a tablespoon of Tomato Paste to the topping as some others did. I'm going to use the recipe for Super bowl Sunday and see if we can't grill turkey burgers using these ingredients. Thank you so much for sharing your recipe!

Greek Garlic-Lemon Potatoes

This dish is so flavorful! And the garlic and lemon compliment each other perfectly without over powering one another. I did use only olive oil instead of vegetable oil & olive oil but other than that I didn't change a thing. I stirred every 30 minutes and added a half cup of additional water twice in the first hour. The potatoes browned perfectly. This one is a keeper, thanks for sharing it.

Artichoke & Spinach Dip Restaurant Style

This one is a Keeper! It was just as good if not better than the one's I had tried in the restaurants. The Alfredo-style pasta sauce make the dish. Next time I make it, I think I will have to double the recipe because it went fast in this house.

Chicken Pot Pie Soup

Really easy and delicious. I put it together in the crock pot at lunch and we came home to a great "comfort" meal that evening. Add a salad and a few biscuits and you have the perfect Winter time dinner.

Spinach Enchiladas Verde

Made a few changes in that we used low fat yogurt instead of sour cream and added some shredded roasted chicken in with the spinach. It was fantastic! The flavors blend perfectly, the Salsa Verde and the yogurt made a delicious sauce. We did not roll our enchiladas but stacked them instead in a round casserole dish and in the order of tortilla, sauce, spinach, chicken, cheese and repeat. Then poured the remaining sauce on the top of the last tortilla and added the remaining cheese. It's much faster to prepare that way and doesn't take away from the taste of the dish in anyway. This recipe is a keeper, thanks for sharing it!

Chicken Thigh Fricassee with Mushrooms and Rosemary

I did a few tweaks such as adding a can of Italian Stewed Tomatoes and also chopped sun dried tomatoes to the wine and let it all simmer together. WOW! This dish is easy to prepare and absolutley fantastic. Thank you so much for sharing it!

Simple Chicken Parmesan

Simply Delicious and So Easy to make. I also added about a third cup of Parmesan to the mozzarella, tbsp of Italian seasoning and sprinkle of garlic salt. My Husband raved about it. I can't wait to make it again. Thanks for sharing!

Figs with Goat Cheese, Pecans and Bacon

This recipe is great with dried dates. I made it last Spring before figs were in season. But last week I tried it with figs and it was a disappointment. In fact we each ate one and threw the rest out. So great concept but dates work so much better.

Texas Slaw

This recipe takes slaw to a whole new level. I was a little skeptical about the ingredients but decided to give it a try and I am so glad I did. It went prefectly with our barbequed ribs and chicken. Yum Yum!

Roast Beef with Coffee

I made this roast just last week and it was so delicious and easy to prepare I am making it again this week. The gravy is out of this world. You don't taste the coffee at all, just a very tender roast with a yummy gravy. Thank you so much for sharing this recipe.

Fiery Pork Skewers

These pork skewers are EXCELLENT! I marinated mine about 6 hours before grilling. The meat was just the perfect balance of spicy and sweet. Grilled pineapple and couscous are the perfect compliments to the dish. Thank you for sharing!!

Skillet Pork Chops with Potatoes and Onion

Portuguese Soup

I have to admit, I was a little scared of this recipe but intrigued by the ingredients. I even called my girlfriend (who is of Portuguese decent) to make sure the ingredients sounded cohesive. The only changes I made was to use Chorizo instead of smoked sausage (make sure to drain the Chorizo after you cook it) and I used beef broth instead of water & I reserves 1/4 of the cabbage and didn't add it until the last 15 minutes of cooking so it had some crunch to it. The first 2 bites I thought 'Oh my goodness this was a mistake' and then on the 3rd bite it was like it all came together and it was amazing! Each bite got better and better. It just takes getting use to the uniqueness of the ingredients but it is so worth it. This will be a perfect dish to make in the Winter. I served mine with a garden salad and a crusty French bread. Thank you for sharing the recipe. It will be made in our house over and over.
