4 out of 5 because the dough is so perfect its not even funny. The baking method is missing some steps to make them authentic tasting though. After I rolled my pretzels to shape, i boiled them individually just until they start to puff up in a mixture of 4 Cups water, 2.5 tablespoons of baking soda. At first I tried someone elses suggestion of 4 cups to 4 tablespoons, but they tasted aweful, like chemical salt, 2.5 seemed to do the trick without being overpowering. Salt with coarse salt immediately after removing from the water and bake for about 13 minutes at 400F, top rack of the oven, on parchment paper or a sil pad so the bottoms dont burn. While still hot baste with melted butter and/or your garlic, cinnamon whatever seasoning you prefer.
