Coconut Oatmeal Cookies I

This recipe is the way I have always wanted them to taste. The only thing I tweeked based on the reviews is that I added a 1/2 cup more oats for substance a 1/2 tsp. salt and for my own flair used butter flavored Crisco. I also topped each one with a half pecan. Its a tasty and decorative touch. These are a keeper!

Tanya's Snickerdoodles

I would give this a five but without the almond extract. They do come out nicely crunchy on the outside and chewy on the inside. I baked them on parchment paper and the bottoms were nice and didn't stick to the pan. Also when they came out of the oven, I sprinkled a little extra topping on them while they were hot and it gave a little extra crunch to it. I agree with the other reviewer too that pushing the balls down a little gives a fuller cookie. Also you don't need to refrigerate the dough for 2-3 hours. Thirty minutes is sufficient.

Easy Morning Glory Muffins

These are great. Very moist. I didn't reduce the oil or the sugar, which I think makes them moist and sweet, but I did add to the mix one peeled and grated zucchini which was yummy. I also used pecans instead of walnuts. Very very tasty. I did not have enough all purpose flour so I substituted 1 cup of cake flour and it made them very soft. Yummy!

Corny Mexican Salad

This is a good solid recipe. I made it even better by adding 1/2 tsp cumin to the sauce, chopped cilantro, diced celery and chopped olive and 1 tsp lemon juice. I added these things and took it to a party--it was gobbled down and four people asked me for the recipe.

Carol's King Ranch Casserole

This is a pretty good recipe. I did make a few changes, and I agree that it did come out a bit soupy. I didn't have a bell pepper on hand so I used celery instead. I sauteed the onion and the celery and added some cumin in butter until soft. Then I added it to the soup mix. I did sub out the mushroom soup for cream of celery and added a 1/2 cup sour cream to the soup mix. I also used 1/2 monterrey jack and half sharp cheddar, and I used salsa wheat tortillas instead of white flour ones. I agree with another review that the flour tortillas make it a bit gummy so I might either use the tortilla chips or corn tortillas next time. I also skipped the first step by buying and dicing a rotisserie chicken. Yummy. I did use both rotel tomatoes and the can of green chilis as well as a 3 tsp. of chili powder because my husband likes things with a kick. He and his dad loved it. They gave it five stars.
