Ham and Cheesy Potatoes

Very easy to make. I had to feed 6 kids with this (and they're all picky), and they actually ate it. I did not include the lemon pepper because I don't like it. It was creamy, tasty, and a great use of leftovers.

Quick Chicken Piccata

I've made this several times for the family, and it's always devoured. I usually double the sauce and cook 6 chicken breasts (there are 6 of us in the family).

Breakfast Kolaches

Another transplanted Texan looking for traditional kolaches! The bread for these is truly perfect. Just like you get at the donut stores in Houston (Shipley's, anyone?). I did not modify the dough recipe at all. However, like most of my fellow Texans, I left out the hashbrowns and used Lil' Smokies and a chunk of Velveeta. Absolutely perfect. On the second batch, I also made a few with Johnsonville Cheddar and jalapeno sausage, diced jalapenos, and Velveeta. They were the hit of our New Year's Eve party. Thank you so much for giving me back a huge piece of my Texas roots!

Lemon Chicken Piccata

We made it exactly as listed (except x3!) and it was perfect. It's very lemony, so if you don't like that kind of taste, either substitute chicken broth and leave out the lemon slices, or look for another recipe without "lemon" in the title. :) Thanks for a great meal! The 4 kids all had seconds, so I'm glad I tripled it!

Asparagus Avocado Medley

We didn't have zucchini on hand, so we went without, and this was still a great salad. We used the leftovers to make omelets the next morning, and they were fantastic! Thanks!!!

Bat Wings

Made exactly as listed, but marinated for about 3 hours first. These were amazing, and everyone at the Halloween party loved them. I agree with others that the flavor isn't intense, but it's addictive!

Yummy Sweet Potato Casserole

I've never in my life eaten sweet potato casserole. It always looks and smells weird to me. This recipe, though, was great. It was easy, and it looked fantastic. So much so that I actually ATE some and really enjoyed it.

Cranberry Sauce with Raspberry Vinegar

This was easy to make, and wowed the guests at Thanskgiving dinner. Most of them were used to gelatinous cranberry "sauce" from a can, so this was a refreshing change for them. Even the kids, who usually avoid cranberry sauce like the plague, ate this one up. Not too tart, not too sweet. Just right.

Chicken Breasts Pierre

I wasn't sure of this recipe when I read the ingredients. I thought it would taste weird... But it turned out amazing. My husband and I actually had a little argument over who would get the leftovers! I followed the recipe exactly, and was really impressed with the way the flavors worked together. I served it over sticky rice.

Best Bread Machine Bread

this bread turned out great. I followed the directions exactly, and was very happy with the results. It was also easy enough for me to allow my 5-year-old to do much of the "work," and now she's addicted to making bread. Thanks for the recipe!

Apple Cider Sauce and Pork Loin Chops

This was phenomenal. Like many others, I didn't have access to frozen apple cider, so I added a dash of nutmeg and cinnamon. All four of my kids (most of whom are picky eaters) gobbled this up. They even asked if we had leftovers so that they could have it again.

Cheeseburger Meatloaf

Made this exactly as directed, only I used the tricks about the rolling (covered a large sheet pan with parchment paper, laying out the meat mixture, pressing down, adding the cheese, and then rolling). I still had a little bit of cheese loss, but this was AMAZING. Such a great recipe! Certainly not one to feed the kids more than once every few months, but a treat, nonetheless!

Easy Tilapia with Wine and Tomatoes

This is a great weeknight dinner. We followed the directions exactly (except we used dried basil from last year's garden because our basil hasn't come up yet). The fish was perfectly cooked with 15 minutes on the grill, and the sauce was very tasty. We served it over brown rice, but pasta would have worked well, too. This is a definite keeper. Thanks for the recipe!!
