Meatball Nirvana

Try with bison! Quadrupled recipe for meatball throw-down. Used 1 lb bison, 2 lb ground beef and 1 lb ground pork. Followed recipe, but made a few changes... 4 onions was too much, put in 2.5 onions, reduced milk to 2/3 cup, added 1 cup ricotta, added 2eggs, reduced bread crumbs in half. Reduced grated parmesan in half, but added 1 cup of a 3-cheese shredded mix (asiago, pram, romano). Added 10 cloves of crushed garlic! 6 tablespoons of fresh basil. It was amazing. Given amount of ingredients, its important to mix evenly, one at a time. It look me a half hour to mix it all

Baked Chicken

blended into a cordon bleu version... I pounded the chicken flat. Dipped in the sauce as stated. I wrapped the chicken around swiss cheese and ham. Then finished as described (used a little less onion dip). I added all remaining sauce to the baking dish. I added sliced mushrooms...I had to bake it longer...very good

Orange Roughy Parmesan

lower fat version: skipped butter, used egg white to dip fish in, then the bread crumb mixture, and kept the rest the same. Used Pam so it wouldn't stick to pan. very good

my whole family loves this: I use shopeg corn (tastes more like fresh/frozen). instead of lime juice, i use italian salad dressing, & fresh tomatoes, and onion salt

Salmon and Shrimp Cakes from Chef Bubba

I didn't have bell pepper, so I sauted shrimp with minced garlic and scallions. Very good! As a side dish to lay cakes on top; I sauted 1/2 c. onion, 1 clove garlic in olive oil and added(5 slices pre-cooked cut bacon). When tender, added large pkg fresh spinich for just a couple minutes...stir and serve...kids love it!
