Pizzelles III

Brought back a lot of childhood memories. These pizzelles are perfect, just the way the recipe is written. My family is Italian and we used anise, but I prefer vanilla. My aunt used to layer Nutella between two pizzelle and that is perfection!

Calico Bean Casserole

I have been making this dish for years and it is always a hit wherever I bring it. It is one of those forgiving recipes...no ketchup? Add salsa? Don't like butter beans? Add black beans. As long as you keep the ratio close it is a winner. I have even left out the ground beef and added a pound of bacon and I like that best of all. Can easily put in a crock pot but I think comes out best when baked.

Scalloped Potatoes and Onions

I can't believe how good these were without any cream or canned soups. I followed the recipe except that I had no mayo so I substitued 2 T of butter, and added some cheese and garlic. I would have give it a 5 except that I thought it had too many onions and would have been bland without some punch. Next time, more spice, less onions. I never would have thought Au Gratin could mean low fat!

Beef Barley Vegetable Soup

I didn't have time for a slow cook meal, so I did it stove top. I doubled the stock and barley and left out the frozen mixed vegetables. I sauted the meat, then the onion, carrots and celery and then dumped in the rest of the ingredients. Also added some garlic. Fabulous. As it is written there are far too many veg, not enough broth or barley.

Health Balls II

These cookies are addictive, but I don't know about healthy! My mom used to make a version when we were kids to use up the bits and pieces left from boxes of cereal. I used less honey, 1/2 cup and made numerous substitutions but keep measurements the same and they came out delicious. To make a little healthier we substituted kashi for rice cereal and flipped the amounts for the chips. Overall a fabulous treat.

Ricotta Cheese Cake

This is a nice every day dessert that is easy to make and can be dressed up with fruits or drizzle of chocolate or Nutella. It is not a showstopper, but very tasty. It would get a five from me, but it tasted too much of cake and not enough of ricotta.

Beer Braised Irish Stew and Colcannon

Good basic stew. I made it in the crockpot and added some tomato paste to add some depth. The colcannon was really good. Very tasty and would definitely make it again.

Banana Cake VI

I would give this cake a 10 star review if I could. It was tasty, moist and like a cake not banana bread which was just what I was looking for. Excellent with the frosting and without. Kids, hubby loved it and I baked an extra to bring to a friend. I did end up baking it for about an extra half hour. Otherwise, my rating is based solely on the exact recipe.

Baked Bar-be-que Chicken

Okay folks, this is a pretty basic recipe and it does taste good, but only as good as the sauce you put on it. It is moist because it essentially steams that first hour before the sauce. It is good, but again, just chicken with sauce poured on it.

Chicken Cordon Bleu I

Made exactly like the recipe. It was moist and flavorful. Had a problem with the cheese leaking out. You have to use very large breasts to roll well and keep cheese and ham inside. Would make again. "Sauce" consisting of canned soup and sour cream was nasty. Do not recommend.

Chocolate Crinkles II

Excellent cookie. Imperative that you take out as soon as starts to crack or you do not get a fudgy interior. Made the cookie exactly as recipe indicated. Barely got 5 dozen with a 100 measure scoop. Gave it a 4 because it isn't an in your face fabulous cookie, but rather very good and looks great on a cookie tray.

Chocolate-Hazelnut Spread Cookies

I loved these cookies. Incredibly easy, but kind of expensive for the amount of cookies it makes. In any event, great cookies with a fudgy Nutella center. It is essential that you take these out when they look like they are not done--8 minutes in my oven. Any more and they flatten out and don't taste very exceptional.

Michelle's Peanut Butter Marbled Brownies

These brownies are excellent but not enough peanut butter taste. Like many others, I have modified the recipe to add a very generous 1 cup peanut butter, up the cream cheese to 8 oz, and added peanut butter chips in as well.
