This was excellent, and very hearty. I did omit the green beans, as I had a green bean casserole. And I omitted the pasta, and used Veg Broth. It was a very healthy, filling and hearty soup. It was a big hit!

Asian Cucumber Thai Salad

Very good..big hit. did not have peanuts, so added 1/2 teaspoon of peanut butter to the vinegar dressing and then tossed it with the cucumbers/onions/tomatoes. Made this as an accompaniment to Thai yellow curry, vege stir fry, tom yum soup and rice.

Creamy Au Gratin Potatoes

This came out great! My roux became lumpy when I added the room temperature milk, so I just strained the milk out and used cornstarch to thicken. It worked great. I also used evaporated milk, and some 2%. I precooked the potatoes and chopped and sauted the onions before assembling the dish. I also used fresh rosemary in the milk cheese sauce. It gave a great flavor. I was able to cook the dish at 350 for 45 min and then uncovered for 10 min since I had precooked the potatoes and onions. It was a hit!!

Artichoke Spinach Lasagna

Made this for Thanksgiving. It was a hit! I mixes the spinach, artichokes and freshh rosemary and parsley with fat free ricotta cheese and fat free cottage cheese and used it between the layers of lasanga. I also used a bottle of pasta sauce with the layers along with cheese. I used the non-cook lasanga noodles and assembled it the night before. it was great.
