Thin Mint Crackers

These really did taste just like girl scout cookies!! I took other reveiwers' suggestions and used Nilla wafers (looks nicer and doesn't have any salt). I couldn't find the Andes baking chips other people were talking about so I actually just used the Andes candy and melted those. Everything came out perfectly and it ended up being much easier than the original recipe.

Holland Butter Cookies

These cookies were sooo good and easy! I followed the recipe exactly. They remind me of those Danish cookies you get in a tin during Christmas, except softer and better.

Sunshine Chicken

Very good!! I didn't have chicken thighs, so I just used drumsticks. Instead of basting every 15 minutes, I dipped the drumsticks in the sauce then put it in the oven for 45 minutes. I basted the chicken once, then put it in the broiler for a couple of minutes to darken the tops a little.

Florida Strawberry Muffins

SO GOOD!!! I substituted the nutmeg with cinnamon and 1/4 white sugar with brown sugar like others suggested. They came out sooooo moist. Maybe it's because I cut the strawberries into very small pieces. They did come out a weird greyish purplish color though... but that might be because I used unbleached flour and I didn't bother to be careful with the way I was stirring the batter (and may have smashed some strawberries). Once my husband and I tasted them though, we could care less about the color!

Marinated Chicken Pita Sandwich

This was so good! I marinated the chicken overnight and the flavor was delicious. Here are the changes I made: (1)Used chicken thigh fillets instead of chicken breasts (2)Cooked the chicken with the marinade first and then drained and browned the chicken in a separate skillet with just olive oil (3)Served with flat bread instead of pita (4)Served with garlic hummus instead of yogurt

Shrimp and Crab Bisque

I just made this tonight and it was really good!! I followed a lot of suggestions from past reviews. I used a serving size of 12 for four people, I used only shrimp, and I used garlic instead of onion. I sauteed the butter, garlic, and shrimp shells together and strained the juices through a cheese cloth. After mixing the dry and wet ingredients together, the soup was lumpy so I used a blender. It came out so creamy! I also left out the wine and it was still really good.
