Cider Vinegar Chicken

I'm gonna give this recipe 5 stars, mostly because of it's simplicity, how few ingredients there are, and how fabulously tender the chicken comes out. I was only making 1 serving, so I just put my chicken in a small dish, sprinkled it with garlic, salt, pepper, and crushed red pepper (as suggested by other reviewers), then covered it with 1/2 cup of apple cider vinegar mixed with 1/2 cup water and a little bit of honey (again, suggested by other reviewers). I'm not usually a huge fan of vinegar, but I thought this came out wonderfully! Ate it over roasted cauliflower, asparagus and yam.

Ratatouille

Very very watery (I had to pour out a bunch of liquid when I pulled it out of the oven) but delicious!! I forgot bell pepper, added yellow squash, and used much less parmesan cheese. I love veggies, so I could have eaten the whole thing in one sitting :)

Stuffed Peppers with Turkey and Vegetables

Quite delicious! I followed the advice of a few others and didn't bother pre-cooking the peppers. I think I only ended up cooking them for about 30 minutes total, so the peppers came out kinda crunchy. I liked this, since I've made stuffed peppers before and they were kinda mushy, but I guess its all about what you prefer. I also used lean, mild turkey sausage, and a little bit of feta on top during the last few minutes of baking - both added great flavor. I'll be making these again.

Marrakesh Vegetable Curry

I just came back from Morocco (Marrakesh included) and wanted to serve my family an authentic Moroccan meal. This was perfect! I came home with a mix of spices from the Medina so I used that and added a little extra curry powder for flavor. Served over saffron couscous and I was in veggie heaven :)

'Calabacitas Guisada' (Stewed Mexican Zucchini)

This was tasty! And healthy too! I had tomatoes from my garden so I stewed them up with a little salt & sugar instead of using canned tomatoes. I used a lot less cheese than called for, and it tasted great!

Cantaloupe Bread with Praline Glaze

I halved the recipe and made many of the same healthy substitutions as other reviewers, and it came out pretty well! The only problem (and I may have either mis-measured my baking powder or soda, or it was just the substitutions I made) but the bread didn't rise very much at all. Didn't make the glaze as the bread is sweet enough by itself. Its a great way to use cantaloupe!

Spicy Mango Sweet Potato Chicken

Very good combo of flavors! I like the spiciness, but I would recommend being careful with how much hot sauce you add, cuz it can get pretty hot pretty fast. I liked how tender the sweet potatoes got with boiling them, but roasting them would work too. Served it atop quinoa for a delicious meal.

Cajun Style Baked Sweet Potato

These were so good! I baked the sweet potato as instructed - cut in half and smothered in the spices. It turned out wonderfully, but next time I think I'll try cubing them and using a ziplock bag to distribute the seasoning over them.

Spicy Peach-Glazed Pork Chops

The glaze for this meal was pretty tasty, but I think the chops we bought were much thinner than most pork chops, so we may have cooked them for too long. The pork itself came out rather tough and chewy. Might try a different cut next time.

Warm Chicken and Mango Salad

This was so good! I didn't have any mango chutney or paprika, and I forgot to put honey in the dressing but it was still amazing. I also used fat free sour cream instead of the vanilla yogurt, so I'm sure my dressing wasn't nearly as sweet as it should have been but it was still a great compliment to the chicken and mango. I lucked out and used my mango right when it was perfectly ripe - next time I have another ripe mango I'll make this again.

BREAKSTONE'S Curried Mashed Sweet Potatoes

I made this as a side dish for one of my favorite meals, and it complemented it perfectly! I eyeballed the curry powder (and added more than called for) then added some cinnamon and cumin as well.

Overnight Blueberry French Toast

I made this for my family when they came up to visit and it was pretty good. I liked that I didn't have to do too much in the morning other than make the syrup and pop the toast in the oven. I did what other people said and whipped the cream cheese then spread it on the bread, but I think it made the cream cheese almost non-existent in the end. Maybe next time I'll whip it up with some sugar or something to make it sweeter. More spices would be nice too. Maybe cinnamon and nutmeg, or more vanilla.

Chicken and Pasta in a Mango Cream Sauce

This was pretty darn good! I am currently obsessed with mangoes so I was excited to find a recipe that combined fresh produce with my boyfriend's love for chicken and pasta. I used fat free half and half with cornstarch in place of the cream, whole wheat macaroni and added some chopped jalepeno for heat. A tasty springtime meal!

Italian Sausage and Vegetable Roast

This was my first time with polenta and fennel. I initially messed up the polenta to water/broth ratio, but it was an easy fix and came out well. The dish was great as a whole, but I would probably use something in place of the fennel next time - just a personal preference. The roasted peppers and tomatoes with the sausage were amazing!

Pesto Turkey Burgers

Quite possibly the best burger I've ever had! I'll never want to go back to beef after these turkey burgers. I used reduced fat feta cheese, 99% fat free turkey and italian seasoned breadcrumbs - the flavor was fantastic! My boyfriend put swiss cheese on top and said it was great, but the feta in the burger was enough for me. We put blue cheese dressing as the condiment on our buns, as well as lettuce, grilled mushrooms and onions. I'll definitely be making this again

Healthy Garden Salad

I'll admit, this salad is growing on me. It took a couple tries over a couple of days but I'm definitely liking how the flavors are blending. If I make this again I will cut down on the lime, but the 2 I had were very large and juicy, so that might be why salad came out a bit too strong on the lime scale. I used a little less oil, parsley instead of cilantro (its all I had) as well as half balsamic vinegar with half white wine vinegar. I love that this recipe uses edamame!

Oatmeal Waffles

so I cheated and used oatmeal plus whole grain pancake mix for this recipe but it was delicious! I also always use applesauce instead of butter or oil in waffle recipe, and i think my oats weren't the quick cook kind but i like how they gave the waffles a nutty texture and flavor. just eyeball the milk amount (soy milk in my case) until it gets to the desired consistency. vannila"s always a good addition too

Coconut Curry Tofu

What a relief! This recipe was SO much better than another curry tofu recipe I found on this site and tried last night. I loved the bok choy and the sauce was a nice flavor. I didn't have fresh ginger or chili paste so I used ginger and chili powders instead. I think I may have forgotten a few other ingredients, but it still came out great!

Thai Curry Tofu

I've had this recipe in my recipe box for months but my roommate (who never cooks) actually tried it first. It made the whole house smell delicious but she said that hers came out a bit too salty and otherwise bland. After reading reviews, I made a bunch of modifications in hopes of creating a tastier dish. I pressed and drained the tofu, then fried it with ginger and garlic. After cooking the onion I added a ton of extra veggies. I used light coconut milk in order to reduce the fat content, but added extra spices (more curry powder, some cumin, cayenne pepper, and crushed red pepper flakes, ground pepper and dried cilantro), then some soy sauce instead of salt. It sure smelled spicy, but after eating it over rice I was pretty disappointed at how bland it still was. I saved the leftovers for lunch tomorrow and am hoping I'll get some more excitement then.

Roasted Garlic Lemon Broccoli

Not my favorite broccoli recipe from this site. The broccoli came out almost crispy, and we didn't even leave it in for the full cooking time. I think I liked how it tasted before putting the lemon
