Key Lime Pie VII

So easy! I used a ginger snap crust from another recipe because I didn't have graham crackers to make the crust. Anyway, the ginger snap crust was perfect for the pie. In case anyone is interested, this is what I did: Mix 1 Cup finely crushed ginger snaps & 3 T melted butter. Press into bottom and up sides of 9" pie plate, bake at 375 degrees for 10 to 12 minutes. Cool completely before filling. I loved the tip about using a garlic press to squeeze the limes! I hand squeezed them just enough to fit them into my garlic press and was amazed at how much more juice I got out of each lime! Update: The crust was a bit thin. Next time I will use 1 1/2 Cups crushed gingersnaps and 4 1/2 T butter.

Creamy Rice Pudding

I'll add one more 5 star review...this is just like my grandmother used to make when I was growing up! Didn't have raisins so omitted those. I also mixed my egg and final 1/2 cup milk together very well and then poured it through a mesh strainer to avoid any eggy strands. Will definitely make this again and can't wait to try it with raisins! Served with whipped cream and a dash of cinnamon on top.

Chewy Chocolate Chip Oatmeal Cookies

Good cookie, but too salty. And, that was after I cut the salt back to 3/4 tsp. I would make these again, but only use a scant 1/2 teaspoon salt. I did love the fact that they were thick and chewy though!

Banana Cake VI

Can I please give this one 10 stars? OMG, this is now my FAVORITE cake EVER!!! DH asked me to next time put chocolate chips in it. I told him, no way! I add chocolate to a lot of things for him, but I'm not messing with this recipe (and I'm not really a chocolate lover...shocking, I know!). I love this just the way it is and this is MY cake!!! hehe I'll make him something else chocolate. :)

Black Bean and Corn Salad II

Very good. I used the recipe here for the dressing on half of the salad, and used a balsamic vinegrette that I had made for another salad on the other half. We actually preferred the balsamic, but both were VERY good. Thanks for a great recipe!

Gouda and Broccoli Soup

This soup is excellent! I had some Gouda I needed to use and this popped up. I used a package of "steam in the bag" broccoli florets, cooked according to package directions, and added it at the end. I finished the soup and then it was about an hour or so before we ate. Unfortunately, it had curdled somewhat by the time we ate which made for a funky texture. Next time I will know to serve immediately. I did use fresh grated nutmeg!

Jim's Cheddar Onion Soda Bread

Love, love, love this bread! It tastes like a cross between a biscuit and bread. The onions are not at all overpowering and the cheese is just right. Served on St Patricks day with cornbeef and cabbage. Will definitely make this one again. Thanks!

Pork Chops Stuffed with Smoked Gouda and Bacon

Awesome recipe. I did add a few leaves of fresh spinach because I had some I needed to use and I thought the color would be a nice addition. Didn't have smoked gouda so used regular gouda as that is what I had on hand. Can't wait to try it with the smoked gouda though! I also made a wine mushroom sauce for the top. Yes, I know I changed a few things, but I can usually tell whether or not a recipe will be good just by reading it. This is a winner!!!

Grandpa's Classic Coney Sauce

We LOVE this on hot dogs! After browning my beef, I used my immersion blender to grind it fine. I used a bit less vinegar and sugar and a bit more catsup than called for (just because it looked like it need more "sauce"). This will definitely be my "go to" for hot dogs! Thanks!

Ingrid's Caesar Salad Dressing

Love this! I used crumbled blue cheese in place of the blue cheese dressing because that's what I had on hand. Update: Hubby didn't care for the blue cheese in this (though I loved it!) so now I leave that out. Also, I only use about 2 T olive oil as and omit the vinegar, but use a little more lemon juice. Just personal preference. Overall, this is a great recipe when looking for Caesar without anchovies. Worcestershire has anchovies in it so that gives it that "Caesar" dressing flavor without the fishy taste. Thanks!

Mini Ham And Cheese Rolls

Excellent! I halved the recipe, added 2 1/2 tablespoons brown sugar and one tsp worcestershire sauce based on other similar recipes. Not sure if that made a difference, but it sure was good! I'll make them the same way next time and there will be a next time! Also, I didn't weigh the ham or cheese, but just added what I thought looked like a good amount.

Tres Leches (Milk Cake)

Good, but very heavy cake (especially, heavy on the tummy!). The 2nd day the left over cake was flooded with milk. It was like I had poured milk into the pan and the cake was sitting in milk. Maybe that is the way it is supposed to be? It was a good cake, but a little goes a long way. This was my first time to make a Tres Leches cake and I doubt I will make another one. Good cake, but there are so many excellent cake recipes out there, I'll probably just make one of those.

Sylvia's Ribs

Wow! These are so good. I admit, I was a bit skeptical about the sauce as it sounded like someone opened their refrigerator door and started dumping stuff in the pan, but it is AMAZING! Sticky and sweet and oh so good. I used baby back ribs because that's what I had. It was one rack and just over 3.5 pounds. I halved the sauce due some reviews I read and it turned out perfect. However, I would not halve the sauce recipe if I were cooking the entire 8 lbs ribs called for in the recipe (some suggested you do this). Other than that, I followed the recipe exactly. Bottom line, I almost halved the meat and I halved the sauce. That's the only changes I made. Thanks for a great recipe!

Cookies....All Dressed

I was skeptical about using the pretzels so I cooked one batch without them. Not good. So, I added the pretzels and while it did help, I still wasn't crazy about these. They just don't have any distinguishing flavor and are a bit bland. Sorry. Also, it seemed like a lot of flour to me and the dough was very dry. I followed the recipe exactly other than not having quite a full cup of milk chocolate chips so I had to finish the cup with semi sweet. I don't think that really made much difference...

Chicken and Gnocchi Soup

A bit bland for our tastes. I have never eaten the Chicken and Gnocchi soup at Olive Garden so maybe I just don't care for the soup in general? I think it would be better maybe if I added in some Italian Sausage and may try that if I make it again...

Crawfish Chowder

Very good. I also used the frozen crawfish tails from Walmart. I did find I needed to add some Old Bay and garlic powder. Also added bit of salt. I didn't have cream of mushroom so I subbed with cream of celery. Used only 1/2 cup butter, but doubled the cream cheese. Can't wait to try it tomorrow after it "melds" in the fridge overnight!
