Coconut Lentil Soup

A bit bland looking. I jazzed it up a bit with chopped red peppers. The quantity of water in the receipe is low...I used closed to 4 cups.

Favorite Lentil Soup

It's not necessary to use a pressure cooker - I used a pyrex 4 quart pot and heavy lid. I recommend using 1 tbs of cumin and 1 tsp of pepper. The final appearance leaves a bit to be desired and might benefit by the addition of some chopped red peppers added along with the parsley just before serving.

Black Bean Soup II

The amount of water seems to be excessive. I used 4 cups (vs 7) and it was still watery. I recommend using 3 cups. Additionally, I used 1 tsp of cumin.

Spicy Indian Dahl

This dish has a wonderful aroma and flavor. I usually do not cook with fresh tomatoes (I don't like their texture or flavor), but enjoyed this combination. I would add sliced carrots and green peppers for more color contrast, reducing the number of tomatoes to 3.

Vegan Curried Rice

Despite my preference for flavorful foods, the proportion of cumin, curry powder and chili powder to the amount of rice seems incorrect. I doubled the amount of rice; the spices were still too heavy. The correct proportion might be 1 tsp or each instead of 1 tbs of each.

Oven Baked Vegetables

A simple dish which is easily tailored to vegetables on hand. I prefer to delete one onion and add a red pepper. I threw in some sliced black olives and sliced mushrooms for good measure. Additionally, I used 3/4 tsp of cayenne pepper to 'jazz' it up a bit.

Pineapple, Lime, and Ginger Soup

The flavor is interesting, but lacks the zing expected after reading the write-up. Additionally, crushed pineapple was not as apealing as pineapple chunks.
