Mock Coconut Pie (Spaghetti Squash Pie)
Oh my this is soooo good. I did change one thing... instead of vanilla I used coconut extract. It's addictive... I ate almost half a pie in one sitting. I did notice that instead of only making one 9 inch there was enough filling to fill 2 - 9 inch shells right to the top. Which was a good thing seeing as I ate as much as I did lol. If I hadn't been the one to make the pie I would never have known that there was spaghetti squash in there. Over all I will be making this again ... this time to share with my friends and family.

Nacho Cheese Sauce
I loved this recipe. As the original recipe it would be great for veggies/mac'n cheese. For myself I didn't add any salt(there is enough in the cheese, & dietary restrictions). With the addition of red and green tabasco sauce, an extra cheese slice, and a couple of squeezes of prepared yellow mustard it rocked as a nacho cheese sauce. I read in a review something about being runny.... this could be because the person didn't use the right and/or enough cheese. The floury taste goes away if you melt the butter and add the flour and cook it by itself for a minute or two before adding in the milk. This is a great basic recipe that I will keep using now that I finally found exactly what I was looking for in a cheese sauce recipe. Thanks.

Creamed Beef for SOS
This was excellent. My husband loved it. However I did make a couple of additions to match our tastes. I added a slice of diced red onion to the cooking meat mixture, and a couple of dashes of worcestershire sauce when I added milk. I also used buttermilk instead of regular milk. I did have to use 2 cups of milk instead of just 1 1/2 cups, but that was expected from other reviews. Overall I will be making this again, and again.
