About this Cook
I'm a single mom of three kids living in a suburb of Baltimore. I work full time, so cooking sometimes feels like a chore. However...I'm trying to fix that. I love to cook when I learn new techniques; like when I finally figured out how to cook with my stainless steel pans without everything sticking. That only took me 10 years!
My favorite things to cook
I'm from an italian american family, so of course I love italian food! My favorites are italian desserts. Oooh, I always love to cook tex-mex because I never seem to ruin those dishes. Also, I'm perfecting my east asian dishes thanks to AllRecipes.
My cooking triumphs
Learning to cook meats in my stainless steel pans! For ten years I ruined salmon and chicken. It's not like my pans came with instructions. Who knew that a hot pan, and olive oil added at the right time could produce a slick, non-stick surface? Now fish comes out of the pan with crispy skin!
My cooking tragedies
Oh boy. I've had tons of those, but the most memorable one was when I started dating my ex-husband. I tried to make a hearty beef stew, but made a burnt mess instead. I worked so hard! My grandmother told me to hide it and try to start over. Hide it?! How do you hide smelly stew? I was so disappointed that I cried...but, now we laugh about it (although I have never attempted to make stew again).

Salmon Pasta Pomodoro
Of course I give it a 5! But when I submitted this recipe, I did not list a specific pasta...choose your favorite (I love angel hair), cooked to your preferred firmness. Also, I love tomatoes! I put in 4-6 romas diced.

Aracely's Flan
Okay, my flan after 2.5hrs, is just now set...dissapointing. I think I will just use a water bath in the oven for now on. BUT, the texture is perfect. I think it's due to the egg yolks being used without any whites. I will use this recipe for the custard part, but make traditional caramel with white sugar (no butter, that can make it taste too sweet), and bake in oven in the future.

Tortillas II
Fantastic! I made two batches that each made 12 med burito/fajita size tortillas. I needed to add another 1/4cup of water, but that may be because of the whole wheat flour I had to use because I was low on the regular stuff. To anyone complaining of dryness, you must use a damp kitchen towel to store just cooked tortillas no matter their size or thickness...I'm not sure of any recipe for tortillas that would not require you to do so. I was able to roll my tortillas out very thin: once I got the hang of it, I could roll one out as the other was cooking. Also, for a little more flavor on my second batch, I substituted the salt for ham soup base...yummy! Thank you for the recipe, I doubt I will ever buy store bought again!
