Easy Meatloaf

I made this with turkey and omitted the milk. As others suggested, added worschire sauce and caramelized the onions too. Very easy and yum. Another fun thing I did with some of the meat mixture is put a large tablespoon of it in a cupcake wrapper, topped it with 4-5 baby spinach leaves, topped that with 1 teaspoon of mozzeralla cheese, a slice of roma tomato, more mozzeralla cheese. Put it in a cupcake pan and baked at 350 for 25 minutes (until cheese was browned). Very yummy and gourmet.

Eggplant Parmesan II

Yum...Yum...and...Yummy. Definitely bake eggplants 10 minutes on each side and spray with olive oil before baking for extra crispy-ness. You can almost serve the coated baked eggplants alone as appetizers. OH, and sweetening the eggplants peices for 30 minutes with sea salt before baking is a must.

Creamy Broccoli Soup

I made this for my daughter who just got braces, so she needed something soft. Very delish. I did increase the amount of broccoli and broth and sauted the onion with fresh garlic in SmartBalance butter blend first. Also added 1/2 cup of heavy cream. As long as you don't boil the cheese, you really can't mess this up.

Easy Alfredo Sauce I

I used Smart Balance instead of real butter, reduced the whipping cream and it turned out very yummy. If your cheese happens to turn into one big blob, like mine did...just leave it on med-low heat for 5 minutes and it will melt and blend out.

Coconut Bread

I did add 1/2 tsp of coconut extract to this and it came out deeeelish. It had the perfect amount of sweetness...just how I like it. Oh, and I sprinkled some coconuts along with the suger on top before cooking. Came out picture perfect.

Crustless Spinach Quiche

I made this using store bought egg whites and turned out really good. The recipe is very versitile and next time I plan on adding some black beans, fresh cilantro, and jalapenos instead of spinach.

Smoked Oyster Spread

I just made it tonight for a party, but I like it. Some changes: I added 1/2 tsp of salt and juice of one lemon. Also added 1 crushed cloved of fresh garlic. It does not look very pretty when mixing so to make it look more appetizing, I cleaned off the sides and sprinkled some ground peppercorn and dry dill.

Cantonese Dinner

Deeee-lish. Okay, I was in a hurry and took partial advice from other readers. Used 2 bone-in chicken breast, 4 bone-in chicken thighs. Removed skin. Dumped in a dutch oven/pot: The chicken, one can of pineapples with juice, 2 cans of dice tomatoes, 1 sm. green peppar (diced), 1 onion (diced), doubled the brown sugar, doubled the vinegar, salt and bring it to boil. Simmer for 45 minutes and YUM. My hubby added hot peppar flakes to his to heat it up. Tasted like a gourmet sweet and sour. We served it over rice. Thank you Amy!

BBQ Pork for Sandwiches

As you can see from the ratings, this is truly one of the best pork bbq recipes. It's easy and fool proof. I usually add a few fresh crushed garlic to this. Also, be sure to spoon some broth over the meat when cooking it in the oven in the final step. I have even used this same exact recipe to make ribs and pulled chicken.

Carrot Cake III

I hate to be a party pooper, but the cake did not turn out that great. First, 6 cups of carrots was way too much and it definitely could have used more of a spice, not sure which spice. I'll make it again, but will tweek it by reviewing other suggestions.
