Easy Meatloaf
I made this with turkey and omitted the milk. As others suggested, added worschire sauce and caramelized the onions too. Very easy and yum. Another fun thing I did with some of the meat mixture is put a large tablespoon of it in a cupcake wrapper, topped it with 4-5 baby spinach leaves, topped that with 1 teaspoon of mozzeralla cheese, a slice of roma tomato, more mozzeralla cheese. Put it in a cupcake pan and baked at 350 for 25 minutes (until cheese was browned). Very yummy and gourmet.

Eggplant Parmesan II
Yum...Yum...and...Yummy. Definitely bake eggplants 10 minutes on each side and spray with olive oil before baking for extra crispy-ness. You can almost serve the coated baked eggplants alone as appetizers. OH, and sweetening the eggplants peices for 30 minutes with sea salt before baking is a must.

Creamy Broccoli Soup
I made this for my daughter who just got braces, so she needed something soft. Very delish. I did increase the amount of broccoli and broth and sauted the onion with fresh garlic in SmartBalance butter blend first. Also added 1/2 cup of heavy cream. As long as you don't boil the cheese, you really can't mess this up.
