Cottage Cheese Chicken Enchiladas

Excellent lower calorie/fat enchilada dinner. I did do some substitutions but what caught my eye was the use of cottage cheese in an enchilada. I followed the recipe up until the addition of sour cream. I used low fat plain yogurt in place of the sour cream. I did use the cottage cheese but used low fat cottage cheese. I had bought 8 inch tortillas and was able to use six of those in an 11x13 pan. I omitted the salt completely and added about 1/2 cup of black beans to the chicken while it was cooking up with the onion. Also used whole grain tortillas. I would have followed the recipe exactly and think it would have turned out great but I am always trying to tweak a recipe to lose a calorie here and there.

INCREDIBLE~Raspberry Cheesecake Cookies

Very easy, very tasty. I ordered the blueberry chips instead of raspberry as we are a blueberry loving family. My husband is a cheesecake lover. The cookie batter seemed somewhat dry to me but I went ahead and followed directions exactly and the cookies baked up perfectly. I baked a full 12 minutes the first batch, cooled and tasted them. The second batch I cooked 15 minutes. I think my oven cooks a bit lower and I hadn't thought to check the temp before cooking... I should always check when doing a new recipe. Like the directions say, cook until lightly golden edges. I liked them best when the edges were golden. I think my husband liked them best from the bowl still in cookie dough, first batch under baked and then last batch baked to perfection! The taste was a nice surprise. I also drizzled some cream cheese frosting over the top... as if they needed anything else! These were good and a real clever idea.

Lepp's Marathon of Love

This is my families new favorite recipe. I had plenty of love, hope, faith, caring and humour on hand. I had to step into redneck gramma's kitchen for some good old fashion smart a$$ness!! I need to keep more of that on hand. Thank you Cindy for helping me to remember how much we all need love, hope, and faith. Thinking of you and Danny somehow helps me.

Best Brownies

I followed the recipe (for the brownie) exactly and they turned out perfect. I pulled them out of the oven at 25 minutes. I did change the frosting by putting coffee in the mix (a condensed version of instant) in place of the vanilla and it too was delicious.

Master Recipe for Rich and Creamy Cheesecake

The recipe was very creamy just the way I like a cheesecake. My husband loved it as well. I had to add additional baking time. I added 20 minutes more and will probably add an additional 5 to 10 minutes next time. I followed directions exactly but the cooking time was incorrect for my 325 degree oven. Even though, the taste was superb. I am trying to replicate the nuns of New Skeete's cheesecakes and this is the closest yet. And if you have never had one of their cheesecakes then you have never had the best cheesecake in the world... they are heavenly and worth every penny (in case you look them up on line and order one!).

Too Much Chocolate Cake

I made this for my chocolate loving husband. Instead of a bundt pan I did two 9 inch layers. After reading reviews, I only used 3/4 cup of oil and 3 eggs. It was absolutely too much chocolate cake and he loved it. As did I.

Turkey Jerky

I used two breasts that were partially frozen which made for easy (thin) slicing. I prefer teriyaki to soy so I marinated the turkey slices in teriyaki with a little honey over night. Stuck them in the oven at 9:00 a.m. at 170 (lowest setting on the stove) and pulled the jerky out at 2:00. It is great. This is a recipe that you could use whatever your favorite seasonings are. You can also take it out of the oven when you want to. I know that some people like their jerky really dry and others like it more moist. Thanks for this great recipe.

Chantal's New York Cheesecake

Very creamy, very good. I baked it at 325 like others suggested. But I took it out of the oven after one hour, let cool on counter and then put in the fridge over nite. It set up well, looked great and tasted wonderful.

Mock Coconut Pie (Spaghetti Squash Pie)

This was a fun pie to make. I would have never though of using spaghetti squash for a pie! We are eating asw healthy as we can so I adapted this recipe a bit. I used splenda in place of sugar, egg whites and baked a whole wheat crust. For topping I used soy whip cream. So if you're craving a pie and want to stick to a healthy diet this just might work for you. The texture was great. I took a previous reviewers suggestion and cut the spaghetti squash small to look more like real coconut. Have fun!

Almost No Fat Banana Bread

Excellent recipe for a low fat banana bread. I followed others suggestions and left out sugar, used 1/2 cup of splenda, 1 egg beater, 3 bananas, 1/2 tsp salt, 1 tsp vanilla and added walnuts. The bread had good consistency and flavor. I much prefer adding butter, sugar and eggs but we are watching our diet these days and this was a very flavorful replacement.

Pumpkin Roll Cake

I made this last night and it turned out beautiful. As well as tasty. My husband has asked me NOT to make it again. Over half of it is gone!? He has no will power! Following the directions exactly everything came out of the pan as directed and rolled/unrolled as expected. I will make this again... only when we have company so my husband doesn't eat the whole thing in a day.

Absolutely the best. I love chocolate chip cookies. This recipe goes beyond the great taste of a good chocolate chip cookie. I followed the directions exactly. It made a huge batch. It's just my husband and I so I froze half the dough. Two weeks later the kids/grandkids came for a visit. I pulled the dough out, cooked the cookies and they tasted great then also. Way to go Bestcooker!!
