Blackened Chicken Pizza with Yellow Tomato Salsa

Very good recpie! I realized that one could skip chopping up the veggies and simply buy salsa fresca in the produce section if they wanted...but I haven't done that yet. I've made this twice so far and the second time, all I could find was Kraft shredded pepperjack cheese with Philadelphia cream cheese mixed in. It makes alot of spice so don't let the 3t of salt throw you off...you can coat the chicken as heavy as you want. You could even halve the spices and still have plenty left over. A keeper!

Chipotle Crusted Pork Tenderloin

Very Tasty! Going to keep this recipe. I couldn't find any chipotle chile powder at Wal-Mart, so I ended up buying some Mrs. Dash Southwest Chipotle seasoning and only used about 2 Tablespoons of that, as a guesstimate (wasn't sure how much of a kick it had). After coating and letting it sit, I seared the meat on a frying pan on all sides, before tossing it in the oven at 400 for 20 minutes. Tossed in a side of Velveeta sheels and cheese with Rotel...very good dinner. Thanks!

Instant Millionaire Pie for Diabetics

I made the recipe as directed. Bought Jell-o Brand sugar free pudding and the personal sized pie crusts and I think, lite cool whip. If you go the personal pie crust route, this recipe makes more filling than for the six crusts that come in a package, buy two.

Marinated Ranch Broiled Chicken

Very tasty and easy to make. After re-reading the recipe, I realized I was using two breasts instead of two breast halves...so I doubled the marinade as I was using twice the meat...and I decided to cut the breasts into strips. I broiled it under the second rack in the oven and then after the time was up, marinated them again and broiled again for another five minutes. The charring of the broiling actually adds quite a bit of flavor as well!
