Vegan Chocolate Cake

These are amazing! I made them as cupcakes. The recipe as posted makes 12 cupcakes (2/3 full) and I baked for 20 minutes.

French Toast Casserole

This was really tasty. I used Panettone that I had bought at Christmas. I had to cook the full 50 minutes and I let it sit for 5 to help it setup.

Foolproof Rib Roast

I made this for New Years Eve dinner for my best friends. It was the first time I've ever made a rib roast! This turned out perfectly! I am lucky enough to have a double oven so the other items I made that required the oven weren't an issue. But you would need to plan accordingly if you only have one oven!

Easy Lemon Cookies

These are my absolute favorite "Christmas Cookie" to make. They're so easy, and fun to play with the recipe. Chocolate cake w/ peppermint extract is yummy too!

Halloween Popcorn Pumpkins

I followed the recommendation of one of the other reviews and added 2 caramel cubes into the 'sauce' and tossed a handful of mini marshmallows into the popcorn mix. They came out pretty good - not overly sweet, and they look cute!

Chocolate Covered Cherries

These are AWESOME! And way easier than I ever thought Chocolate Covered Cherries would be. I only got about 48 out if it, but I probably used a bit too much dough on the first few cherries. I only had a few that I had trouble getting the stems out of, so I kept those for myself. I gave about 30 of them out as gifts for Christmas, and everyone who received them was very impressed.

Soba with Toasted Sesame Seed Sauce

Monkey Bread

This is a new Christmas morning tradition for my family! This bread was awesome!! The Apple Butter makes for a nice different flavor beyond just sweet and cinnamon. I had a hard time finding 12oz refridgerated biscuits, but after checking every single tube in the section I finally found them.

Butternut Squash Fries

eh... I don't know if I'd make these again. I used vegetable oil and a pinch of salt with pumpkin seasoning. I probably should have added a pinch of sugar or brown sugar as well because the pretty much just tasted like cooked squash. they were a little on the soggy side, but not awful.

Oven Chicken Fingers

I thought these were only OK. The crumb coating was falling off, and they didn't get very brown. I tried the honey mustard sauce, which was good - similar to some restaurants. But not like my fav sauce, which I'm still trying to find a recipe to re-create it!

Spiced Pumpkin Seeds

These were simply excellent! I remember my mom making roasted pumpkin seeds when I was a kid - but I think they were purely salted (no oil/butter even) so they were OK, but not great. I didn't change a thing and these were great! They'll be on my list every fall!!

Slow Cooker Chicken Stroganoff

This was pretty good. I did make a couple changes because of what I had on hand. I used butter instead of margarine, and cream of celery soup because I didn't have cream of chicken. The chicken was a bit dry following the recipe as written (maybe the was because the butter doesn't have as much water as margarine?) But, I'll probably try this one again, but I'll put the chicken in with the soup and a little chicken broth. My sauce was a bit thick too - but maybe it just cooked a little too long. I tried to thin it out with some milk. It wasn't bad, and I will try this one again.

Slow Cooker Chicken and Dumplings

This turned out really good... and easy! My husband rated it a 9 out of 10. I did just a few things different, as some other reviewers mentioned too. I used frozen chicken breasts, a handful of frozen chopped onions, a 16oz pack of homestyle biscuits (8 biscuits) torn, and a carton of chicken broth in place of the water. I also added a little dried parsely, dried thyme, and dried rosemary to add some flavor. I didn't want to over do it, but next time I'd probably use a whole teaspoon of each (I had used maybe a quarter to half a tsp.) The chicken was super moist and falling apart when I took it out to shred it. But it was nice and creamy, a great cold night dinner!

Beer Brats

I used turkey brats (as my husband doesn't eat pork). And I think we determined that we just don't really like brats in general. The flavor was pretty good, and I cooked the whole meal outside using the side burner on our grill, while grilling some hot dogs for the kids.

Classic Texas Caviar

This was a surprise hit at my last family party. I had an uncle in town who is vegan, so I tried to find something extra I could make for him to enjoy besides salad! My in-laws who are usually very resistant to trying anything new and different devoured it, and were asking for the recipe. Mine was a little on the blander side because I only used 1 jalapeno, and removed all the seeds and ribs because I didn't want it to be too spicy. So I had to re-season it with some salt, pepper, and garlic powder after it was refrigerated. So, just like the recipe states - taste and adjust the seasoning to your liking. I would make this again!

Excellent Broccoli Cheese Soup

I scaled it down just in case we didn't like it. It was great! I used just shredded cheddar cheese (3 cups) and it got a little 'chunky'. But I think I read somewhere that if you toss the cheese with just a Tbsp or 2 of flour, it'll keep it from getting chunky when it melts. I'll try that next time. But the flavor was really good - a lot like restaurant versions!

Beef Nacho Casserole

I usually ask my husband to rate new dinners on a scale of 1-10 and he gave this one a 10.5 and said it was probably the best thing I'd ever made. I used Tastefully Simple Corn, Black Bean Salsa, and about 2/3 of a 15oz can of corn. Everything else was the same - it was excellent! He was happy that there were leftovers that he took to work for lunch the next day, he said it reheated well too!

A Good Easy Garlic Chicken

The chicken turned out pretty good. It was moist. used 2 Tbsp butter and 1 Tbsp EVOO because I knew my pan was already pretty hot. I made it with brown 'boil-in-bag' rice which I cooked in chicken stock. So I made a pan gravy with about 3 Tbsp flour, cook for a couple minutes, then added a few ladels full of chicken stock from the rice pot, salt & pepper to taste, and served that over the chicken and rice. My kids loved dipping the chicken in the gravy, and it just added a little extra to the meal.
