Quinoa Chili
I had quinoa, garbanzo beans and ground beef but it all worked in this chili! I was really surprised, to tell the truth. Good flavor. I reduced the chili powder and omitted the jalapeno as I'm not a fan of spicy. I also did not use the corn and zucchini as I didn't have either. The rest I followed. I enjoyed this. Will make again, and plan for the zucchini and corn.

White Raspberry Muffins
These were a hit and disappeared quickly. I did substitute chocolate chips instead of white chocolate because we didn't have the latter. I was disappointed because the streusel topping "sprinkled" on the top all fell off the muffin and baked onto the pan. Just be sure and pat it into the muffin mix with a spoon before baking.

Baked French Toast
I tried this recipe for the first time for a family brunch and it was delicious. I did use heavy whipping cream rather than half and half because I bought the wrong stuff but can't say if it made a difference. I did not read the other reviews before making the dish and had no problems. It is very sweet, but everyone liked it. In fact, we ate on it all day.
