Easy Pork and Sauerkraut

this was amazing. everyone loved it. it went really well with the mash potatos. i used an apple in the recipe as suggested. i had doubled on most of the ingredients to make extra. it was a tradition in my family to make this for new years. i think this was the best it has ever tasted. the apple and the beer make a huge difference in the taste. im not sure if my mom did that. i was worried that i had used too much beer, (i used 2 full beers) but it cooked all day long and by the time it was finished it was perfect. everyone loved it, we ate many left-overs and it tatested great every time.

Simple Baked Apples

this was really good. i used almond flour rather than bleached. i think i used splenda to sweeten, rather than sugar, but no one could tell. i will definately make these again. i already bought more apples to do it! its a healthy sweet treat!

Pork Chops Stuffed with Smoked Gouda and Bacon

i loved it. i had huge porkchops so i would have added more cheese though. it made it really easy to create the pocket in the chop because they were so thick. i used dry parsley cause i didnt have fresh. i sprinkled a little season salt on the porkchops as well, which gave them more flavor. my husband and i also cooked them on the grill for 8 minutes rather than 5 on each side because of how large they were. we wet the toothpicks down before putting them in the porkchops. the porkchops held together well, we used 2 toothpicks per chop. i made this for my mom and my husband. we all loved it!

Louisiana Sweet Potato Pancakes

i made these with sweet potatos from my garden! i 1cup of unbleached flour, 1/2 almond meal, low fat organic milk. i also added cinnamin and vanilla. delish!

Charline's Sweet Potato Casserole

Love this. Been making it for years. My family is from PA and this is as close to my mom's recipe as I could find. A lot of people are weird about coconut, even tho I like it, I will leave it out. I use mostly organic ingredients. This has been a hit at every holiday dinner I've gone to. I will probably cut back on white sugar and butter like suggested. I will also make this the day before like another person mentioned.

Peanut Butter Feather Pancakes

I am making these tomorrow first thing! i am going to do as one person suggested, and add bananas. then i thought a honey syrup will be yummy. altho, i want to try strawberry jam too. :) i have an organic chunky peanut butter, will add some sea salt, cinnamon and vanilla extract. also will go with one 1/2 tblspn of baking powder and one egg as suggested by several. gosh, im thinking i want these now! uh-oh... :P will update tomorrow!

Vegetarian Moroccan Stew

i made this for my husband and he really liked it. he is not a big fan of exotic foods. however this went over well. changes: i used regular potatos rather than red potatos. i added one extra cup of vegetable broth in addition to the 2cups. i used the cinnamin stick but also added 1/2 TBSP of cinnamin. i also added one extra TBSP of ground cumin. i used 1TBSP of pepper and 1/2 TBSP of salt. i used only 1/2 the ammount of olives because my husband doesnt care for them. but i think he actually liked them in this dish. i bought plain, pitted olives in water and sea salt, so they were mild in flavor. i also added a bit of the olive juice to the stew just for added flavor. i still feel like it could have used something more, but overall it was a great new recipe to try and i will make it again!

Classic Meatloaf

I followed the directions exactly and the meatloaf was very mushy when it came out. I thought it was the pureed veggies that did it. I used fresh veggies too. We did make the best of it and the entire thing did get eaten. I don't think I will make this again, unless I hear of a similar recipe that maybe solves this issue that a lot of people seemed to have. I do like the idea of the veggies being in it.
