Slovak Stuffed Cabbage

Reviewed: Feb. 26, 2001
I've been making stuffed cabbage for quite a few years but wanted to find something just a little different; and this was! We absolutely loved it! My husband loves sauerkraut, my kids hate it and truthfully, coming from a german family and eating is constantly while growing up I didn't care if I ever had it again. Needless to say, my husband thought this was terrific, my kids didn't even realize they were eating sauerkraut and I thought the kraut, coupled with the bacon added a very wonderful flavor. I'll make stuffed cabbage this way from now on. Thanks!! UPDATE! Since my recent move to Kentucky, I found out that the love of my life hadn't had a cabbage roll since he was just a kid. With that I just knew I had to make this particular for him. Kelly, I wish I could tell you how much he loved this! He actually said this was the most delectable dish he's had in a very long time! Nice compliment for both of us! Thanks again!

My kids are in school, soup's simmering for tonight, lunches are made for tomorrow and I sat down and found this recipe and had to make it immediately. Absolutely delicious! I love the slight lemony flavor!

Famous Chicken Francaise

Reviewed: Feb. 28, 2001
This was good, however, my family liked my own recipe better. I do the opposite; I dredge chicken in flour first and then the egg and fry until golden. I also make a lemon sauce by melting one stick of butter in a sauce pan adding chicken (depending on how much chicken I have) and the juice of several lemons (to taste) Once it comes to a boil I stir in a water/cornstarch mixture to thicken. I then pour sauce over chicken and bake for about 40 mins. at 350.

Mexican Baked Fish

Excellent recipe! I used Tilapia instead of cod and combined cheddar and pepper jack cheese for a little spice. Once baked, I put the fish under the broiler for a few minutes to really crisp up the corn chips. Kids loved it!

Scrumptious Chocolate Cake

Reviewed: Mar. 5, 2001
I would definitely fight over the last piece of this cake! The peanut butter frosting is out of this world; especially if you're a peanut butter freak like I am. I baked it in a removable tube pan and I guess because of it, I needed to add about another 20 mins. baking time. I also decreased the amount of confectioners sugar in the frosting from four cups to less than three. It was plenty sweet and absolutely fabulous!

Mexican Turkey Stuffed Shells

Reviewed: Mar. 9, 2001
My family loved this recipe! I was a little concerned about the shells not being open enough to stuff as so many of them were completely closed so I decided to to with manicotti pasta instead. I made a pastry bag with a zip lok bag which made filling the tubular pasta very easy. Because I was dealing with a larger pasta I assumed that the manicotti would require more liquid, which, as it turned out, certainly did. I used 2 l9oz cans and one l0oz. can of enchilada sauce. I also used two small jars of mild green chopped chilies in the meat mixture and for an extra kick, I sprinkled a combo of shredded cheddar and pepper jak cheese over the pasta. Yum!

Czech Cabbage Dish

Reviewed: Mar. 22, 2001
I had to make this dish because my husband absolutely loves cabbage. He literally could not stop eating it! The only change I made was to add more vinegar to give it more of a tangy flavor.

Chili I

Reviewed: Mar. 26, 2001
Great chili recipe! I was a little apprehensive about the amount of sugar in this recipe so I cut it by half and it was fine. The cayennne pepper added the perfect amount of spice so I substituted mild peppers for the hot. The beer, coffee and cocoa powder give this dish a wonderful full bodied flavor. My husband is the chili maker in our family and he thought this was much better than his own.

Baked Potato Salad II

Reviewed: Mar. 28, 2001
Sooooooooo delicious! My family went nuts over this. Because my kids don't care for olives, I left them out and because I don't care for processed cheese, I used shredded Vermont cheddar instead. Great make ahead side dish for company!

Parmesan Dijon Chicken

You certainly can add whatever you want to this dish and it will always come out wonderful. I added garlic and onion powder to the bread crumbs along with crushed "Durkee Fried Onions". The chicken was tender, juicy and absolutely delicious!

Salsa Chicken

Reviewed: Sep. 13, 2001
My whole family liked this dish very much. I too cut the chicken into strips and served it in soft tortillas with lettuce and tomato. For a little twist on this recipe; saute chicken and bell pepper in a pan. Add salsa, 3 heaping tablespoons of peanut butter, 3 tsp. lite soy sauce, 1 tsp. ginger and garlic to taste. Simmer for about 15 minutes, serve over rice and sprinkle with peanuts. You can't taste the peanut butter, but it gives the sauce a wonderful flavor.

Cheddar Bay Biscuits

Reviewed: Sep. 23, 2001
I halved this recipe, however, used 4 ozs. of shredded cheddar. I also used the the seasonings in the dough itself along with some cayenne pepper to give it a little zing. Unfortunately I didn't have any parchment paper and they stuck to my non-stick cookie sheet. Regardless, they were soooooo good!

Chicken Monterey

Reviewed: Sep. 24, 2001
Fortunately, my husband and I raised our children to at least "try" everything that's on their plates. To our delight they've developed very mature palates and I knew that this recipe, with all of the wonderful mushrooms would be an instant hit. Although I only made four chicken cutlets I kept the sauce amount the same and used about 4 ozs. of cheese. I didn't have any white wine on hand, however, I used a good hardy beer instead. If you're not a salt person, leave out the celery salt; it won't make a difference. This dish was delicious!

Easy Creamy Chicken Mushroom Sauce

Reviewed: Sep. 24, 2001
I hadn't read any of the reviews before I made this dish and found it to be absolutely amazing that people would actually use 5 tsps. of pepper and then complain that there was too much pepper in this recipe! I used about 3/4 of a tsp. and it was delicious. Thanks shadowhawk!

Monterey Chicken

Reviewed: Sep. 27, 2001
I absolutely love to cook and do a lot of it, which is the one an only reason I consider myself an experienced cook. The problem with being an experienced cook, is that there don't seem to be many surprises left, whether it be recipes I find, or even the restaurants my husband and I frequent. HOWEVER, this chicken dish, is truly one of the best I've ever eaten! The different ingredients flavored this dish beautifully and it is certainly elegant enough for a dinner party. Thank you Leigh; it's a winner at our house!

Cajun Chicken Pasta

Reviewed: Sep. 28, 2001
When ten of us share our N.C. house rental for our yearly vacations, I always do all of the cooking and am constantly looking for meals that can feed a crowd. Well, this recipe certainly did the trick! I used evaporated skim milk in place of the heavy cream and penne in lieu of linguini. Everyone truly raved about this dish!

Excellent! All I had on hand was Italian sausage and it was wonderful. I did need to add another can of tomatoes as there wasn't enough liquid for the rice to cook. Family loved it!

Apple Crumble Pie

Reviewed: Oct. 8, 2001
Very good apple pie. Topping was scrumptious! If your apples are very juicy (which mine were) you may need to add some cornstarch to your apples. I also added a good amount of cinnamon to my apple mixture as my family loves it. Thanks!
