Cod Fish Cakes

This was a good starting point but it really needed some help in the flavor department. Not enough seasonings and way too much potato. One or even none would be fine and I think a better replacement would be some Panko bread crumbs. I added chopped celery, lemon zest, lemon thyme, black pepper, a bit of Old Bay and coated with bread crumbs before frying. Thank you!

White Bean Bruschetta

Ok, I'll admit that I did cheat on this only because there's a brand of brushetta out there that just can't be beat. However, I did add the olives and beans and the addition of goat cheese in the appy is pure genius! My daughter is a goat cheese freak which is why this recipe caught my eye and needless to say, she loved it! Thank you so much Kristin and it will be back by popular demand this weekend!

Egg and Cheese Puffs

What a great and easy breakfast that looked just like little baby quiches! I learned from everyone else and didn't use the paper but sprayed my non stick muffin pan and with a gentle swirl around the edge with a knife, they popped right out. I used good old New Jersey Taylor Ham instead of the bacon and for an Italian twist I made some using pepperoni, provolone cheese and topped them off with brushetta. Yum and thank you so much Karen!!

Pretty Chicken Marinade

This was absolutely delicious! I marinated over night and there was no sign of the lemon cooking the chicken. The flavor was wonderful and the chicken caramelized beautifully on the grill. Rave reviews from my whole gang. Thank you Tara!

Skewered Potatoes

Sarah your recipe was a huge hit with my gang! The only thing I added to the marinade was some parm cheese and black pepper. Cooked the potatoes in the morning and let them marinate until the grill was fired up that evening. Thank you so much!!

Smoked Chile Cole Slaw

I love spice but I've found that Chipolte peppers are just a little over the top so I used green chilies and added some cayenne to the sauce for some heat. Not a fan of the cilantro so that was replaced with flat leaf parsley and cut back on the cumin as it tends to overpower quite easily. Went really nicely with ribs and family enjoyed very much. Thank you!

Green Beans with Smokey Bacon Vinaigrette

This dish is wonderful Frank and certainly no secret as it's a very typical side that German and Austrian families have been making for years. So glad you discovered it tho because it really is amazing. I went for the big guns and used a whole pound of bacon and apple cider vinegar instead of the red. Family "yummed" their way all thru dinner and told me that it tasted just like my German potato salad except with green beans! Thank so much Frank!

Spectacular Marsala Glazed Carrots with Hazelnuts

Barbara, we thought your recipe was fabulous! Everyone went back for seconds and thirds and just raved. The only thing I did differently was to use brown sugar instead of white and altho I didn't read it until now, I'm loving another reviewers suggestion of adding a bit of heat. Next time for sure. Golden Carrot Buns

We enjoyed these dinner rolls very much altho I don't think the carrot did much more than give them a pretty color. The buns themselves had great texture and rose beautifully. I could see adding raisins to these for a nice breakfast treat. Thank you Katharine!

Strawberry Pretzel Squares

My cooking forum is making this for our monthly Cook Along and I'm sorry to say that I wasn't really into this dessert. I opted to top the jello with strawberry cool whip and then decorate the four edges with more sliced berries. Had I not added that layer of Cool Whip I would have been even more disappointed because I really can't imagine it without it. I felt the cream cheese layer was just too tangy and didn't blend with the rest of the dessert. I guess what I'm trying to say is that when I'm eating a layered dessert, I expect each to compliment one another and I just wasn't tasting that with this one. To me, there were no team players here as each layer seemed to stand totally alone. The pretzel crust was interesting, but I would have preferred a graham cracker crust instead. Maybe I'm just too traditional.

Grilled Shrimp Scampi

Fantastic recipe Holly! I made a huge dinner Saturday night and two hours after dinner was over and dessert was eaten, out came the leftover shrimp and it was gone in a flash! Everyone raved over this and the smokey flavor from the grill gave the shrimp that extra YUM factor. Thank you!

Charleston Shrimp 'n' Gravy

I'm going to have to agree with a few of the other reviewers in that the gravy was quite bland even tho I did get the roux to a deep rich color. I kept adding in more seasonings along with cayenne to give it some kick and then in the end I added just a dash of Gravy Master. That seemed to do the trick to give it the richness I was looking for. Not a bad recipe at all; it just needs a bit of excitement. Thank you for a good start!

Slow Cooker Carnitas

We thought this was absolutely delicious! I did cut way back on the cumin as I feel that a whole tsp. would have overpowered the dish and I also added in some chili powder and chopped onions. From others reviews I noticed that many skipped the cinnamon and I'm glad I used it as it added a subtle but very nice background flavor. Served these wrapped up in jalapeno cheddar flour tortillas. This is a keeper and thank you!

Greek Salad I

Spinach Chicken Parmesan

Even tho I did tweak this quite a bit, the recipe has good bones, hence the reason for the four star rating. Being that Parmesan cheese is in the title, one would think it would play a more important part other than a mere 1/3 cup for six chicken breasts. I also wasn't sure what the purpose was of just sprinkling that small amount onto the chicken. You might as well just put it in the sauce itself. I wanted this dish to stand out, so I placed at least a good cup of parm onto a plate and added some seasonings. Each piece of chicken got an egg bath, was then was coated with the cheese, went into a skillet with a bit of butter and canola oil to fry to a nice crusty and golden brown. I replaced the pimentos with mushrooms, quadrupled the sauce to which I added more seasonings and used fresh spinach that I ran thru my food processor. Any leftover parm was melted right into the sauce. The end result was fabulous and my family raved. Thank you so much for a really terrific start!

Bloody Mary Ceviche

This was quite good, however being that the recipe called for pre-cooked shrimp I wouldn't call this a ceviche. Ceviche is seafood that marinates and "cooks" without heat in a citrus juice for several hours. Not a fan of the cilantro so I left it out and replaced the greenery with parsley. Family enjoyed this very much and thank you!

Tarragon Chicken Salad II

This chicken salad was quite good and got rave reviews from my gang. I did add my usual garlic and onion powders plus black pepper. Kids are not fans of the raisin so I left that out. Tarragon came thru just enough without overpowering the salad. Thank you!
