Citrus Ceviche

Definitely a hit with my family. We opted to use shrimp for this recipe but next time I'm thinking Cod would be really good. I don't do cilantro but my family does so I tasted before it went in and really enjoyed the addition of OJ. So refreshing on a hot summer day! Thank you!

Asian Style Country Ribs

We decided to grill these instead of using the slow cooker so I simmered my ribs in water for about 45 minutes and then marinated them for several hours. I used low sodium soy sauce and just because I had it in the fridge, I added Hoisin Sauce to the mix. These were delicious and everyone loved them. Thank you!

Jalapeno Popper Spread

Fabulous recipe Denise! I used half parm and half cheddar and fresh jalapeno's instead of the canned. (note: if using fresh, please wear gloves while dicing the peppers as the juice ended up settling under my rings and gave me a pretty good burn) I topped the dip with a sprinkling of parm and panko bread crumbs and placed in the oven instead of the microwave so the panko could crisp up. This dip lasted about ten whole minutes! Thanks Denise!

Turkey Spaghetti Pie

This isn't the type of recipe I would make from scratch, but when you've got leftover spaghetti, it's a great way to use it up. Instead of the sour cream I used ricotta cheese and replaced the mozarella with provolone. No complaints from my gang and thank you!

Sausage Gravy

Oh wow.......incredible! I used Jimmy Dean sage bulk sausage which was really flavorful. I used quite a bit more flour than suggested and it came out just perfect. The simplicity of this recipe is down home, authentic and needs no bells or whistles. Sunny side up eggs went very nicely with with this biscuits and gravy dinner which my family absolutely adored Denyse. Thank you!

No Mess Squash on the Barbeque

Give Away Zucchini Grill Out

Instead of rounds, I sliced my zucchini in half lengthwise and then skewered them. It made it so much easier to cook on the grill this way. Didn't have any Italian dressing in the house so I used a Cranberry Balsamic instead. Tender crisp and absolutely delicious. Thanks Dave!

Savory Grilled Potatoes

Oh yum was this ever delicious! My family loves their taters just about any way I make them but me, I'm not a huge fan so I usually pass them up unless their mashed and smothered with gravy. However, this was one of those rare exceptions where I just couldn't get enough! The parm and the mayo reminded me of our favorite Broiled Tilapia Parmesan recipe on this site so I just knew it had to be yum. I didn't measure anything but I used five potatoes and I'm sure added much more parm then called for. In addition to the parsley and paprika, I added onion powder, oregano, basil and marjoram. As I said, I didn't measure so my mixture was quite thick and to thin it out I drizzled in evoo and eliminated the butter. Terrific recipe Darlene and thank you!!

Sauerbraten Klopse (Sauerbraten Meatballs)

I really liked the concept of this recipe but being that I make sauerbraten all the time, I knew I would have to change this up. My mom was born in Germany, taught me how to make it and our version doesn't use allspice, ginger or cloves. Instead I seasoned the meat with garlic and onion powders salt and pepper and caraway seeds and minced onion. I did brown the meatballs as the recipe stated to get those flavorful caramelized bits on the bottom of the pan. Once browned I added more minced onion to the pan and then sprinkled in flour to make a roux. One cup of liquid was definitely not enough to make gravy so I used an entire box of beef stock. I didn't measure but slowly added in the sugar and vinegar until I was happy with the balance of slightly sweet and sour. The gravy was again seasoned and made richer with some Gravy Master and a dollop of sour cream to smooth it all out. The end result was very good and I thank you for a great start!

Herbed Feta Dip

Heather this is an excellent dip! This is truly a no guilt dip and one that's actually good for you! I used a good Greek yogurt and because I didn't have any mint, I subbed with lemon thyme. Some icy cold cucumber spears made the perfect and most refreshing mode of transportation to my mouth. Yum and thank you!

Chili Con Queso Dip II

Definitely one of my kids all time favorite appy's! Because processed cheese food and canned chili is so loaded with sodium I only make this dip using homemade chili and we think the beans add even more yum. Thanks so much Kathleen!

Herb Biscuits

YUM! Oh my were these every delicious! I had crescents in the house which I rolled as usual and then just sliced in half. Like others, I did cut back on the butter and added in a goodly amount of garlic powder. Whatever butter was left I simply brushed over the top of the rolls and then sprinkled with parm cheese. Everyone raved and thank you!

Greek Pasta Salad I

Like Rob, we're making this as our community cook-along on our forum. I used tri color corkscrew pasta, added English cucumber, red onion as well as the green, garlic and herb feta cheese and cider vinegar instead of the red. My girls gave this an immediate 5 stars, had it for lunch today and the whole pound I made is gone! That's quite the compliment and thank you so much for a delicious and very refreshing summer pasta salad recipe!

Man Dip

One of my kids all time favorite dips! I like to flavor my cream cheese by mixing in garlic and onion powders, chili powder, a bit of cumin and a couple of cans of green chili's. A combination of cheddar and pepper jack gives it a nice little kick. Thanks so much!

Coconut Chocolate Cake I

My daughter requested this cake for her birthday and we all thought it was yummy. Instead of using marshmallows I decided on marshmallow cream and had no problem spreading the filling. Like some other reviewers I made a ganache using semi sweet chocolate chips. Thank you so much Leslie!

Absolute Best Pancake Syrup

What a great and delicious alternative to maple syrup Melissa! The only thing I may do differently next time is cut back on the sugar as I found it just a little too sweet. Added more cinnamon than called for and (blush) stupidly used baking powder instead of the soda! Ha! No matter because it turned out great anyway. This syrup went perfectly with Pumpkin Pancakes from this site. Thank you Melissa!!

Pumpkin Pancakes

Ken's Stuffed Shells

Wow! These Yum shells got rave reviews and were inhaled by my gang last night! You just know dinner is delish when they start eating and all goes quiet....well at least until the mmmmm's and the eye rolling starts! Ha! They especially loved the sausage mixed in with the beef which is what my daughter felt set the dish apart from all the rest. I followed the recipe with just a couple of minor changes. Here in NJ, cottage cheese just doesn't make it with Italian cooking so a good imported ricotta was used instead. I also added the egg to the cheese mixture rather than the meat and used all fresh herbs from my garden. I've been making stuffed shells for a lot of years but this winning recipe is the only one I'll be using from now on. Ken, thank you so much for sharing with us!

Oven Fresh Seasoned Potato Wedges

This recipe not only works with potatoes but with other vegies as well. Have also tried this with broccoli and asparagus. Yum! I did add more evoo than stated, skipped the salt as the parm had enough on it's own and with the potatoes I sprinkled in a bit of paprika. So good and thanks Heather!
