Tasty Lentil Tacos

Reviewed: Dec. 2, 2010
I loved these Michelle! Lentils are delicious anyway and packed with fiber and protein they're also one of the healthiest foods you can eat. For my taste buds a little cumin goes a long way so I cut way back on the amount but increased the chili powder. As my significant other says, this is real "Linda Food!" Thanks so much Michelle!

Frozen Bananas

Reviewed: Nov. 30, 2010
Oh yum! I'm always trying to find healthy desserts for my significant other who every now and then gets a hankering for something sweet. These are SO good and you're right Kelsey, there are so many possibilities to experiment with. For a lighter and more refreshing treat, I also dipped the banana's into yogurt and rolled in a healthy cereal. Guilt free and delicious. Thank you Kelsey!

Yummy Sweet Potato Casserole

Reviewed: Nov. 26, 2010
I was actually looking for an acorn squash casserole recipe but couldn't find anything that appealed to me. In a recent recipe request for Thanksgiving side dishes, Tizzyliz recommended this sweet potato casserole so I decided to switch out the the potato for the squash and I'm happy to say that it was a hit at our holiday gathering. Because I wanted this to be a bit more savory than sweet, I left out the white sugar and it was still delicious. Thank you so much Tina!

Raspberry Cheese Spread

Reviewed: Nov. 22, 2010
First of all Jane; terrific recipe! Must tell you the story of what prompted me to even try this. I'm an administrator of a cooking forum called The Friendship Diner and one of our moderators who's also an avid AR member posted your recipe asking the rest of our members what we all thought of it and should she make this as an appy for Thanksgiving. I commented saying that altho it sounded just a bit odd, at the same time I found it intriguing and felt she should test it out on friends before the holiday. In the meantime, another member of ours decided to give it a whirl and divided the appy into four sections. She used the raspberry preserve on one, grape on another, orange marmalade on the third and hot pepper jelly on the last quarter. She honestly couldn't decide which one was better! When I saw what she'd written I decided that I just had to give this a shot too being that I had everything in the house to make it. Oh boy Jane, I don't even know what to say except that we were both really impressed with this delicious appy!!! I loved the texture the nuts added and the slight sweetness of the jam complimented the cheese so nicely. There's only one little thing I would like to give this wonderful recipe next time and that's just a bit of heat. Pepper Jack cheese in lieu of the mozarella might be a good start or just a little sprinkle of cayenne would also do the trick. Thank you so much Jane and I can't wait to try this with other preserves!

Seattle Cream Cheese Dogs

Reviewed: Nov. 21, 2010
I'm rating this for my sweetheart as I'm not into hot dogs and this was our Cooking Forum's Community Cook-Along recipe choice for this month. Rob rated this a four merely because he loved the caramelized onions and kraut, however, felt the cream cheese was a waste of fat and calories being that it was barely noticeable. Thank you Dolan!

The Best Oatmeal Cookies

Reviewed: Nov. 21, 2010
Oh my were these tremendously good! My only change was that I left out the raisins and subbed with chocolate chips. I super sized the cookies to use for ice cream sammy's but not before devouring several on the sly! My S.O.'s (significant other's) grandchildren loved these. Thanks so much Melanie!

Ciabatta Bread

Reviewed: Nov. 21, 2010
Before I made this bread I did a bit of research and found that the dough is supposed to be wet and sticky which is exactly what I ended up with. Marina, this was delicious and exactly what I had hoped for. Crusty on the outside and soft and chewy on the inside with lots of beautiful holes. Delicious and thank you!

Stuffed Acorn Squash

Reviewed: Nov. 12, 2010
Ok, I admit, I cheated big time with this but the end result was so good anyway! We feel that acorn squash is pretty sweet on it's own so I skipped the brown sugar. Here's where the cheating part comes in. I simply cooked the two halves of squash in the microwave, made Stove Top stuffing, added in some browned sausage to make it more of a complete meal, stuffed the squash and placed it in the oven for twenty minutes. Delicious Weavre and thank you so much!

Mama's Asian Chicken and Rice

Reviewed: Nov. 10, 2010
This was definitely a good recipe but like others, it didn't wow us either. We felt it needed more spices including a bit more heat and it seemed a little on the sweet side. I guess due to the zest I tasted a lot of orange which I would have liked to have toned down some. However, would I make this again? Oh yeah I would because the recipe has great bones and honestly, that's where it starts and this was a great beginning. Thanks so much Scarlett!

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

Reviewed: Nov. 7, 2010
Fantastic sammy that Rob and I both loved! I didn't measure the hot sauce but just kept sprinkling it in until I could taste the heat. What an amazing sauce this made so I made sure to use it on both slices of bread. I also placed the red peppers in the sandwich right from the get go and it was fine. We'll definitely be having this one again Jen and thank you!

Ghirardelli® Classic White Chocolate Creme Brulee

Reviewed: Nov. 5, 2010
WOW! Oh my was this ever amazing! Tonight I was meeting two of my significant others grand children and I wanted to make something special for them. They're little but I figured every kid loves custard so why not. Well let me say that the two of them got the biggest charge out of grandpa torching their dessert! Like others I decided to use milk chocolate instead of the white and it was absolutely fabulous to say the very least. This is worth many more than just five stars! Thank you!

Chicken Breasts with Lime Sauce

Reviewed: Nov. 5, 2010
My first review since this Jersey gal picked up and moved down to Kentucky to be with the love of my life! Yea! This was yum as is but I'll admit I kicked it up a bit by adding chopped garlic to the sauce. I took "Likes2cook's" advice and stretched the sauce by adding in some chicken broth and thickened with corn starch. As far as the chicken is concerned, I had shredded cheese I wanted to use up so I incorporated that in with the bread crumbs. My chicken breasts were really large so after frying to a nice golden brown, I finished them off in the oven. Rob and I both enjoyed this dish and I'll be making this one again in the near future. Thank you!

Beef Stuffed Manicotti

Reviewed: Oct. 18, 2010
The filling is quite bland as written and was in desperate of herbs and spices. I sauteed minced onion and garlic and added it to the browned beef. There's nothing Italian about cottage cheese so I used a good ricotta instead and to make life easier, I made my own manicotti shells using crepes rather than the pasta tubes. This was a good starting point tho and with a little tweaking it was devoured by all. Thank you!

Spanikopita

Fantastic recipe! I too added an egg and a few more seasonings. I've done this making the triangles but when in a hurry, rolling the phyllo up strudel style saves time. Bake it whole and slice when slightly cooled. Thank you!

Kicked Up Mac and Cheese

Reviewed: Oct. 11, 2010
Well Hyperpuppy, you sure made a few guys quite happy with this recipe! Honestly, other than adding my usual garlic and onion powders, I really didn't change much of anything. My only addition was to cover the top of the casserole with shredded cheese before the bread crumbs went on. Hey, you can't get enough cheese right! Thanks a bunch!

Chipotle Crusted Pork Tenderloin

Reviewed: Oct. 11, 2010
Linda, I'm so happy to be the first to review your wonderful recipe! I really liked the idea of the pineapple and brown sugar marinade but didn't have any juice in house. I ended up taking a can of cranberry sauce and running it thru my food processor to make it more liquid. Mixed in some brown sugar and gave the tenderloin a nice coating. I marinated overnight and this morning I then scraped off the majority of the cranberry and coated with the dry rub which hung out in the fridge the entire day. I cooked for four guys tonight and I got RAVE reviews from each and every one of them! The meat caramelized beautifully on the grill and the rub gave it a fantastic crust. Great recipe Linda and we all send a big thank you from New Jersey!!

Maple Pancakes

Reviewed: Oct. 10, 2010
I thought these pancakes were just average. I used real maple syrup and no one even knew it was an ingredient. Also found the batter to be too thin which was easily rectified by adding more flour. Pancakes were eaten but no one raved.

Parmesan Baskets

Yum, I love these Terry! I too just made rounds to add to my spinach, quinoa and cucumber salad which I'm enjoying right now. I'm going to have to think of something clever to place in the bowls as they do sound just adorable. Thanks so much!
