Chicken with Lemon-Caper Sauce

All I can say is......OH MY!! There wasn't one over rated review for this recipe because it was absolutely incredible!! Instead of having to pound the chicken I bought the thin cutlets which worked out beautifully. I made five cutlets and was still able to cut back on the butter. I'm a red wine drinker so I just subbed with chicken broth and added in some garlic powder and parsley flakes. Bravo "Alissasmom" for a job well done!!

Tomato Cucumber Salad II

Like others, I added dill and a splash of vinegar to the salad. Also sprinkled in feta cheese and topped with crumbled bacon. This was absolutely delicious and very refreshing. Thank you so much for sharing!!

The Cake That Doesn't Last

Made this for my mom's 78th birthday and it was loved by all. I subbed applesauce for half of the oil and heated a can of cream cheese frosting in the microwave and used it as a glaze to drizzle over the top and sides. So good and thank you Jenny!

Olive and Blue Cheese Ball

Fantastic spread with all of my favorite ingredients! Big hit at Easter! I took "SHORECOOK'S" suggestions and also rolled in the walnuts. (BTW Cape May is my yearly favorite place to be!!) Thank you so much Kristle for a wonderous appy!!

Bacon 'n' Egg Salad Sandwiches

I've never met an egg salad I didn't like and this was very good. Not a biggie to make but I did need to add a lot more mayo than called for. The bacon really made it! Thanks Delores!

Mexican Meatloaf II

YUM! This was so good! I used ground turkey, nacho chips instead of the crackers and put the cheese (Monterey Jack) on the inside of the loaf. Enjoyed by all and thank you!

Mashed Potato Hot Dish

This is total comfy food and so perfect when you've got left over mashed potatoes altho for a dish like this, a good brand of instant would work just fine. I added my usual garlic and onion powders and used ground turkey. Next time I'm going to use taco seasoning in the meat and pepper jack cheese for a different twist. Thanks so much for posting a quick and easy week night meal!

Delicious Apple Sauce

Loved this apple sauce! I've never used brown sugar in mine and found this to be so much better than white sugar. My apples were very juicy so I only needed a tad of water. A huge hit at Easter Sherice and thank you!

Roast Leg of Lamb

Wonderful recipe with a few seasonings that I haven't used in the past but found they added such a nice flavor. We pulled it at 140 as my family enjoys it a bit more on the pink side. The drippings made an delicious gravy. Thanks Sharon!

Makeover Garlic Spinach Balls

To make these even healthier, I used rolled oats in place of the stuffing, egg substitute only and eliminated the butter all together. They rolled well and baked up beautifully. I really enjoyed them and once baked, I simmered the spinach balls in marinara sauce. So good and thanks!!

Slow Cooker Chicken and Dumplings

A good base recipe that you can certainly make your own. I found it too bland for our tastes so I kicked it up with various seasonings and some gravy master. I used broth instead of the water and Bisquick in lieu of the canned dough. Carrots, celery and even peas are a nice addition to this dish. The end result was tasty and I thank you Janiece!

Mexican Sour Cream Rice

For our tastes, this needed a little kicking up, so I added in garlic and onion powders, a bit of cayenne and chili powder. Not a cilantro fan, so I left it out. All in all, a pretty good side you can certainly play around with. Thank you!

Caper Chicken Cacciatore

This was so different from my usual Cacciatore recipe which is why I was so anxious to try it. I'm a huge caper and olive fan and thought they both went very well with this dish. I did, however, add my usual garlic and onion powders along with some Italian seasonings. Terrific dish Jo Ann and thank you!!
