Dill Pickle Meatloaf

It's a rare occasion that I make meatloaf with beef as I normally use ground turkey, however, DD bought a huge package of the beef so after five burgers, I decided to throw together a meatloaf with the rest. Found this recipe to be a little different from the norm which is why I had to try it. Honestly, this was probably the moistest beef meatloaf I've ever made and the dill juice gave it a nice slight tang. Like others, I doubled the sauce and I chose to use breadcrumbs instead of the bread slice. Great recipe CaraMeg and thank you!!!!

Mexican-Style Taco Salad

This was so enjoyed by everyone last night Fiestaqueen! I added garlic and onion powders to the meat, due to allergies, left out the carrot and used pinto beans instead of the kidney. The real fun came in when I took large Burrito size tortillas and made taco salad bowls. I inverted two small metal mixing bowls and sprayed them with cooking spray. I then sprayed both sides of the tortillas and placed them on top of the bowls and kept smoothing the top and sides until they formed to the bowls. Popped them in a 355 degree oven until they were golden and crispy. They came out great and once cooled I piled in the salad, used H.V. Spicy Ranch Dressing and topped with shredded cheddar. Sweet Spicy Wings

We make wings all the time and they've always been deep fried. Grilling them was a first for us and I can honestly say that I don't ever want to go back! They were amazing and we loved the sweet and spicy sauce which was also a very nice change. Thank you Lisa!!

Chicken Pasta Salad II

Need to grocery shop tomorrow as there's nothing in the house to eat, yet I still needed to pack a dinner for DH who works the night shift. This was quick, easy and perfect for a warm summer evening. I added more seasonings than called for; my usual onion and garlic powders, parsley and dill weed. Red onion added to the nice array of colors. Very nice Heather and thank you!

Vietnamese Spring Rolls

My review is certainly no reflection on the recipe itself, it's just that my family didn't really care for these. It was a texture thing with the rice wrappers they didn't like. I'm certain they're just used to a crispy shell as in fried spring or egg rolls so being that I read you can sub rice wrappers for egg roll wrappers I'm going to give them a shot and try frying them. Don't get me wrong, they all ate two of these but they didn't ask for a repeat performance. Oh well, their loss! Thank you Cristina!

Homemade Wonton Soup

This was my virgin voyage in making homemade wontons and I'm thrilled to say that this recipe was a huge hit with my family. The pound of pork made more than enough filling so I froze what was left and will use it to make egg rolls next week. Took love2cook's advice and simmered the wontons separately from the soup. Great suggestion. Thank you Starry Night for a great recipe!!

French Dip Sandwiches

I too used my slow cooker for this recipe and replaced one cup of the broth with beer. Toward the end of cooking I tasted and felt it needed more pizazz so added in some soy sauce, worcestershire sauce and a chopped onion plus my usual garlic and onion powders. Even my non red meat eating daughter loved it. Thank you!

Raspberry Cream Cheese Coffee Cake

Because I was taking this to our local Oktoberfest for our friends and family to enjoy, I doubled the recipe and baked it in a large Pyrex pan. Had I not doubled it, I definitely would have taken others advice and cut back on the almond extract. I used the one and a half teaspoons and it was just enough; any more would have been overpowering. Once completely cooled, I dusted the top with powdered sugar. I'm happy to say that the cake was loved by all Susan and thank you!!

Remoulade Sauce a la New Orleans

What a fantastic recipe! I could see using this with not only shrimp, but with crab cakes, salmon cakes, cold lobster or any type of fish for that matter. I left out the olives but I did use the capers which added a nice tang. So good and thank you Cookincowgirls!!

Sloppy Joes

After reading the reviews I decided to taste before adding the sugar. The bbq sauce seemed to add just enough sweetness for us so I also omitted the vinegar. Altho I didn't think this tasted like a traditional sloppy, we still thought it was very good and being that my youngest daughter is a bbq sauce nut, she thought they were out of this world. Thank you Sandra for a delicious, quick and easy dinner!

Sean's Falafel and Cucumber Sauce

Spent the 4th on my brothers boat and I brought these for appy's. They were a huge hit with everyone and the cucumber sauce was so refreshing! I replaced the baking powder with self rising flour and because I had it in the house and needed to get rid of it, I minced some red bell pepper and added that to the mix. Delicious and thank you Sean!

Mary Anne's Carrot Cake

My daughter made this for her boyfriends birthday and it was absolutely delicious. She's not a raisin fan so she subbed with walnuts. The pineapple was a wonderful addition and certainly helped make this cake extremely moist. Great recipe and thank you!!

We thought these were really good! I used chocolate vanilla cream Pop Tarts and Strawberry ice cream. I warmed the Pop Tarts first which melted the ice cream just enough. You might want to try it. It was delish!

Super Summer Grilled Bluefish

A neighbor caught shark and blue fish and because I really don't like the blues, I had every intention of making shark. I accidentally took the blue out of the freezer and once I realized my mistake, I went searching for a recipe that would hopefully take out the oily and fishy taste. I must admit that the marinade certainly did the trick. I did taste and altho I'll not likely change my mind about this particular fish, my girls thought it was pretty good. Thank you Miller for saving tonights dinner!!

Bacon-Topped Savory Waffles with Onion Sauce

Because this recipe was so different, I was immediately intrigued. First let me say that I had decided from the get go to kick up the onion sauce. Instead of adding sugar, I brought out the sweetness by chopping the onions and then caramelizing them in my skillet with butter and added black pepper plus onion and garlic powders to the sour cream. So delish and it tasted very much like a yummy dip. My girls tried this before I did and immediately gave it four stars! They said the waffles tasted very similar to when we cut up pieces of Italian bread and mop it up in seasoned bread dipping oil. They were on point with the exception that the seasoning was in the waffle! So good! Altho we all thought this was great, I think this would make a better appy. I would cut the waffles into semi thin wedges and place them in the oven to crisp up. As I said, the sauce is thick enough to be used as a dip and I would just add my bacon into the mix. Paired with a spinach salad, Ash and Ty called this a really fun dinner. Thank you Ashley!!

Fab Summer Blackened Chicken Salad

This salad was so good and a snap to put together. Instead of frying the chicken whole, I sliced the breasts into strips and then seasoned. Not a sun dried tomato fan so I left those out but because I had everything on hand, I added broccoli, carrots, cukes and topped with feta. The avocado beautifully complimented the spice of the chicken. Very nice and thank you!

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Even tho I changed up the breading process, (due to lack of eggs, ha!) I feel the filling is still the mainstay of this dish and it was fabulous! Tyler, my youngest daughter isn't the biggest cheese foodie, yet she gave this a five star rating. Again, it was only the breading that I changed out in that I used fresh bread crumbs to which I added tons of garlic, onion powder, black pepper and parm. I dipped the chicken into melted butter, coated with the crumbs, placed in a casserole dish drizzled the remaining butter and baked. Wonderful dish Danielle and thank you so very much!

Halibut with Cream Sauce

What a wonderful recipe Ginny and the sauce was out of this world! Due to rain, I had to make this in the oven and like Lisa, I gave the dish a quick broil to brown and crisp up the topping. I did add some lemon juice to the sauce to brighten it up and some capers just for fun. This is, without a doubt a keeper and I thank you for sharing this yummy dish with us!
