Quick and Easy Grilled Potatoes

Baked Beans II

We thought these were just average in taste and not really worth the effort when there are so many delicious canned baked beans on the market. No complaints tho as they were gobbled up by my gang. Thank you!

Swiss Cheese 'n' Onion Quiche

I normally make my quiche with cheddar cheese so this was a nice change. I added bacon, mushrooms and spinach, used fat free half and half and a few seasonings. Because of my additions I needed to use another egg. So good and thank you Jan!!

Southern Fried Cabbage

Great start to a wonderful dish, but it truly needed more flavor. I used much more bacon than stated, therefore didn't need to use the oil at all. Family loved it and thank you!

Fried Green Tomatoes

Like Rookie Cookie, I also used corn meal and turned half of what I made into Fried Green Tomato Parmesan the same as I would with eggplant. I couldn't get these fried fast enough as everyone kept stealing them off the plate! Thank you BethZuke!

Pineapple Orange Pancakes

My daughter made these and loved them! She cut back on the buttermilk to half a cup, skipped the OJ and used a quarter cup of the pineapple juice. Next time she plans on using crushed pineapple instead of the slices. Miss Tyler thanks you Chann!!

Chocolate Chip Banana Bread I

Delicious!! The only change I made was cutting back the sugar to one cup and adding a crumb topping. This was perfect in every way and I'll be making another to send to my banana loving daughter who's away at school. Wonderful and thank you!!

Roasted Chicken Salad Bites

It took me forever to get past the idea of mixing sweet and savory together but I finally have and just adored this chicken salad. I used a pre-cooked rotisserie chicken from the grocery store, cut back on the dill a bit and added in some finely minced onion and a little garlic powder. Instead of the bread I served this on top of baby spinach leaves. So yum and thank you Tracey!

German Potato Pancakes

These are more like hash browns, not German potato pancakes. Potato pancakes are not shredded but grated, placed in a towel and the liquid squeezed out. To make the task less time consuming, I slice my potatoes into chunks and just run them thru the food processor. My kids love hash browns and for a breakfast treat, these were very good. Marinated Greek Chicken Kabobs

This chicken was so delicious and my gang including visiting extended family all loved it. The yogurt kept the chicken so moist and with the addition of my usual garlic and onion powders, it was very flavorful. Quick, easy and so yummy! Thank you!

Spinach and Cheese Stuffed Pasta Shells

This was a snap to put together and very good with some minor changes. The fennel addition didn't appeal to me so I left that out and used fresh basil from my garden. I always add an egg to my filling and because I wanted the filling to be extra cheesy, I also added shredded mozarella in and on top of the shells. Thank you Kitkaty!

Val's Hungarian Jewish Chopped Liver

This is truly a most wonderful chopped liver recipe altho I must admit that I do like mine without lumps so I use my food processor. I also enjoy adding a bit of garlic and some cognac. Thank you Valerie!

Buttery Lemon Spinach

Way too much butter in this recipe which I even cut back to three tablespoons. Decided to saute the garlic first in the butter and then add it. Really enjoyed the lemon flavor tho and thank you.

Portobello Penne Pasta Casserole

A rare occasion that this gal will rave over a pasta dish as I'm not a huge fan, however, this one deserves a big round of applause! Followed the recipe for the most part with just a few minor changes. Love garlic, so I increased that to four cloves, had fat free half and half in the fridge that I wanted to get rid of, added black pepper and a bit of cayenne into the sauce and used half mozarella and half parm cheese for both the sauce and the topping. Our cooking forum chose this recipe for our Community Cook Along and so far, everyone is loving this dish! Thank you so much!!

Chicken Fajita Marinade

Just by the smell of the marinade alone I knew this was going to make some fine tasting chicken and it came thru with flying colors! Followed the recipe with the exception of the cilantro; not a fan. Family loved this one and I think next time I'd like to try this with a nice piece of cod. Yum and thank you Olivia!

Thai Spiced Barbecue Shrimp

This is an excellent recipe Ned and altho due to sudden downpours we were unable to cook them on the grill and used the grill pan on top of the stove instead. Everyone raved over the marinade altho next time I plan on upping the amount of curry paste as I would like it with a bit more heat. Thanks so much Ned and there will be a next time!!

Red Velvet Cake III

This was a first in making Red Velvet Cake and it turned out beautifully! My daughter has been bugging me to make this for the past two years and because I really don't like baking, my younger daughter did the honors of making it for me. I so wish I had stepped in to read the reviews only because I felt it could have used more cocoa powder. No matter, it was still so good and the frosting was delicious! So light and fluffy and it certainly made enough for even three layers. Such a pretty cake and thank you so much Mary!!
