Chili Taco Popcorn

This was SO good! To cut down on the salt I made my own taco seasoning and used lightly salted microwave popcorn. Big hit and thank you!

Easy Blueberry-Lemon Parfait

Who knew something so yum could be so good for you too? I used Greek yogurt and was thrilled to see the health benefits of ginger snaps! This makes a terrific breakfast as is and if in a hurry, would also make a super smoothie. Thank you!!

Coconut Poke Cake

Wow Leslie, you're one popular lady in this house tonight! What a terrific cake! As others have already said, make sure you don't use coconut milk but cream of coconut as the recipe states, such as Coco Lopez. Yum, yum and what do you think about adding crushed pineapple to the cake batter? That might be a nice addition too! Thank you so much Leslie we all loved this!!

Easy Steak Sandwich

Used leftover london broil for this along with roasted red peppers and hot banana peppers. Pepper Jack cheese went nicely with this sandwich and so did some thinly sliced, fried potatoes. Thank you!!

Garlic-Herb Mac & Cheese

Ha! Saw this recipe just this morning on the King Arthur Website and it called my name! Made it tonight and it was fabulous!! I learned a long time ago to replace saw dust canned bread crumbs with Panko; YUM!! Thank you!

Baked Potato Soup V

YUM YUM! This was so delicious that there was not one leftover to be had!! I used skim milk and took others advice and replaced some of the milk with chicken broth which still resulted in a thick and creamy soup! I also added a bit of liquid smoke and come cayenne for a bit of kick. Absolutely wonderful and thank you!!

Pesto Mushroom Chicken

Absolutely loved this recipe Jennifer and so did everyone else in my family. So easy yet certainly company worthy. Due to raw walnut allergies, the only thing I did was toast the nuts before making the pesto. Wonderful and thank you!

Apple Goat Cheese Bruschetta

My youngest daughter Tyler and I are goat cheese freaks so I just had to give this one a try. Ty and I are both allergic to apples so I used pears instead and replaced the dried herbs with fresh as I wanted a more delicate flavor. Once out of the oven, I lightly drizzled balsamic over the bread. Wonderful and thank you for a terrific appy recipe!

Beef Fondue with Sauces

At our post Christmas tree picking and chopping party we always serve both cheese and and frying fondue for beef, chicken and shrimp. Wanted to find some interesting sauces and these were a hit with all of the guests! Another idea is to make a tempura batter for the chicken and shrimp and serve with a sweet and sour sauce. Delicious and thank you!

Best Meatloaf in the Whole Wide World!

Wish I could split the rating on this because the topping was so delicious, but the meatloaf itself needed some serious help. There are virtually no seasonings listed in the recipe which is rather unusual. I didn't see the need for both bread crumbs and saltines, so I skipped the crackers. A whole onion, garlic and onion powders, black pepper, dried parsley and worcestershire sauce went into the meat mixture. The end result was very tasty but I truly suggest you tweak and add seasonings to your liking because the glaze alone is worth trying. Thank you!

Eggnog French Toast

Had leftover eggnog and this was truly the perfect way of using it up. Ran out of pumpkin pie spice so I just subbed with some nutmeg. I don't eat French Toast but the kids thought it was fabulous and to me, that's all that matters. Thank you so much Robyn!

Creamed Tuna On Toast

I really wish they made a low sodium version of cream of celery soup so because they don't, I used cream of mushroom instead. As others suggested, I added a can of baby peas and more seasonings. Total comfort food and thank you!

Beet Salad

There are so many taste sensations going on in this salad that your mouth will be doing the happy dance. Slightly sweet, slightly bitter and that nice bite from the feta all works to make one incredible salad. Try adding some candied pecans for another layer of texture and crunch. Sesame Brussels Sprouts

This was really good, but as written definitely too salty as another reviewer mentioned. I boiled my sprouts in low sodium chicken broth and also used low sodium soy sauce. This recipe was a nice change and I thank you!

Green Bean Casserole Remix

This was a nice change from the regular green bean casserole and we all loved it. Like another reviewer mentioned, it did seem on the thin side, so I added a can of cream of mushroom soup, used fat free half and half and some black pepper. I'll admit, I just couldn't tear myself away from the fried onions, so I did end up adding them to the mix. Excellent recipe chocoholic and thank you!!

'Day Before Payday' Kielbasa and Corn Hash

Ha! Love the title of the recipe because we've all been there at one time or another! This was great and the kids really enjoyed it too. Reminded me of a dish my mom made for us when we were kids. I did add in more seasonings but other than that, it was yum as is. To me the fried eggs or even poached are a must to make the dish special. Thank you so much!
