Salsa Chicken Rice Casserole

This recipe is the perfect week night meal that's incredibly kid and husband friendly. My only change was mixing the cooked chicken with some taco sauce and of course, added in more seasonings. Great recipe and thank you!!

Swiss Chicken Casserole II

We loved this recipe Carolyn! Took the advice from others and used much more soup than stated; four breasts and a family sized can of soup. I also seasoned and browned the chicken and then deglazed the plan with white wine and added it to the soup.Instead of mixing the stuffing crumbs with butter, I used evoo and added in some parm cheese. This is true comfort food that soothes the soul anytime of year. Thank you!

Tasty Lentil Tacos

Who thought in a million years that I could turn my meat loving husband into a now HUGE lentil taco lover!? Oh my did he ever love this. I'd made it before so I already knew it was amazing and was so anxious for him to try it. My only change was making my own taco seasoning to help cut down on the salt. I feel so good serving this to my family and especially to my daughter who is seven month pregnant. Nothing healthier than legumes! Thank you so very much for a great recipe!

Missy's Candied Walnut Gorgonzola Salad

This is one amazing salad! The sweetness of the candied walnuts, the tang of the cranberries and vinaigrette and the bite of the blue cheese are contrasts that all worked beautifully together. These delicious flavors just pop in your mouth with every wonderful bite. Thank you!!

Turkey a la King Deluxe

I chose this recipe because I liked the addition of sherry and it certainly did give it a wonderful flavor. Of course I always add a few more seasonings but other than that, I followed the recipe with the exception of using cream of mushroom soup. Yesterday turned into a nice chilly Fall evening so this was the perfect comfort food dish. Thank you Jessica!

Bob's Slow Cooker Braciole

I'm not the meat eater in the family but according to my husband, this was truly wonderful. I did replace the breadcrumbs with a mixture of diced onion and garlic merely because I felt it would add better flavor. I did of course, indulge in the sauce over some pasta and it was absolutely delish. A little time consuming to make but well worth it. Thank you!!

Chicken Breast Cutlets with Artichokes and Capers

Hubby and I absolutely loved this dish Pina! I made this recipe as stated with the addition of a bit of garlic powder to the sauce and after one bite decided this one was a keeper for sure! This was quick and easy for any night of the week yet I consider this company worthy. Next time I'll warm up some Italian bread to mop up more of that wonderful sauce!! Thank you so much!

This was really delicious Elizabeth and such a great way to use up our bumper crop of tomatoes! My only addition was adding seasonings to the mayo along with some parm. Hubby LOVED this and thank you!

Ultimate Shrimp Scampi

Oh my was this ever delicious and SO different from how I usually do scampi. On vacation I had quite the audience to cook for and this was a true hit!! The kids went wild over this because it included all of their favorite things plus those little extras that sent it over the top. Truly company worthy and will be making this one again!!

Poached Salmon II

Our WC beach vacation always includes lots of seafood and this was one of the dishes we made for seafood festival night. One of my hubby's favorite ways of eating salmon is poached and this recipe was much more flavorful than how we usually make it. Thank you!!

Hash Brown Casserole I

Fantastic dish Diane!! I made this for my ever lovin' future SIL as he is my potato freak. We were in Wildwood Crest, NJ for vacation and with all the seafood we were eating my hubby was happy to change the menu up with some smoked ribs and this potato casserole. The only change I made was topping the casserole with buttered bread crumbs instead of the crackers. This was great and thank you!!

Buttermilk Corn Fritters

I needed to add a little more baking mix to make the batter thicker and also added in a heaping tablespoon of sugar. They came out light and crispy and went great with our chili. Thank you!

Gramma Brown's Corn Chowder

My gang went nuts over this and when my future son-in-law calls something I make "gangster" I know it's amazing!! I made a roux instead of the paste by adding the flour to the bacon and vegie mixture. I also added some cayenne as my family likes things spiced up a bit and because I had it on hand I threw in a couple of cups of shredded cheddar. So delish and thank you!!

Ruben's Garlic Grill Sauce

Quinoa and Black Beans

I love quinoa and loved this recipe too. Being that cumin can overpower a dish, I cut way back on the amount. I'm also not a cilantro fan so I subbed with fresh parsley. Such a healthy little dish and thank you!!
