About this Cook
On August 24th, 2012 on the beach of Wildwood Crest, NJ, I married the love of my life! My two beautiful daughters, Ashley and Tyler along with their boyfriends, Kyle and Jordan were by our sides. Kyle was sweet enough to become ordained a couple of months ago and married Rob and I. It was amazing to marry the man of my dreams at the place which has always held such a special place in my heart...... Growing up a German/Austrian girl there are some dishes my mom made that I couldn't stand, like sauerkraut and pigs feet! That particular dish will never be cooked in this house, however, there were some really wonderful and comforting recipes as well. My Oma was the kind of grandmother who spent all day in the kitchen and baked the most delicious goods. I loved her poppy seed cake, vanilla crescents, plum dumplings and apple strudel. Altho I didn't inherit her baking skills, she was also an incredible cook and did it with so much love...that's what I was lucky enough to inherit from her.
My favorite things to cook
Rob and I love Mexican food, but we also love the comfy cozies like stews, chili and soups. We're also big seafood eaters so I'm always looking for different ways of preparing fish. A few years ago I developed a love for baking bread. I have no interest in owning a bread machine because to me, kneading your own bread is almost comforting, not to mention theraputic! I also love cooking and sharing recipes with my friends on our cooking forum. My favorite family cooking traditions
Since my kids were babies, I have made a heart shaped meatloaf on every Valentines Day. I use onions to spell out "I Love You". A big pot of pea soup with sausage is our Halloween dinner tradition. After walking around in the cold with our friends, there's nothing like coming home to that comforting bowl of soup! Making six hundred cookies at Christmas time is something that my whole family and friends look forward to every year; and Christmas would not be Christmas without my Omas' famous and delicious walnut crescents.
My cooking triumphs
My mom is an amazing gravy maker and for years she tried to teach me, but mine never turned out nearly as well. Her method was a bit confusing to me. One day I was watching the "Frugal Gourmet", (remember him)? and he demonstrated gravy making step by step. His method made sense and was so much easier than my moms way. I can now FINALLY say that my gravy is as delicious as moms.
My cooking tragedies
Oh gosh, I was a teenager and decided to make chicken soup which was one of my Oma's specialties. It was actually starting to smell really good and I was beginning to feel pretty darn proud of myself. It came time for the noodles and I stupidly dumped the whole package into the broth. What I ended up with was chicken flavored noodles!

Salsa Chicken Rice Casserole
This recipe is the perfect week night meal that's incredibly kid and husband friendly. My only change was mixing the cooked chicken with some taco sauce and of course, added in more seasonings. Great recipe and thank you!!

Swiss Chicken Casserole II
We loved this recipe Carolyn! Took the advice from others and used much more soup than stated; four breasts and a family sized can of soup. I also seasoned and browned the chicken and then deglazed the plan with white wine and added it to the soup.Instead of mixing the stuffing crumbs with butter, I used evoo and added in some parm cheese. This is true comfort food that soothes the soul anytime of year. Thank you!

Tasty Lentil Tacos
Who thought in a million years that I could turn my meat loving husband into a now HUGE lentil taco lover!? Oh my did he ever love this. I'd made it before so I already knew it was amazing and was so anxious for him to try it. My only change was making my own taco seasoning to help cut down on the salt. I feel so good serving this to my family and especially to my daughter who is seven month pregnant. Nothing healthier than legumes! Thank you so very much for a great recipe!
