Spicy Slow Cooker Black Bean Soup

Instead of "soaking" the beans overnight, just wash the beans; add the chicken broth (or whatever liquid you want to use); bring to rolling boil for 10 min., cover and let set for 2 hrs. Easy, and a "no fail" way to soften any bean you want.

Skillet Chicken Cordon Bleu

Really Good!! I doubled the sauce, added seasonings (heavily) to the chicken while sauteing since there was no other seasoning. I meant to add Old Bay Seasoning but forgot, but I'm sure it would only enhance the flavor! Served over basmati rice and with green peas. So easy, and YUMMMY!!

Maine Lobster Lasagna

OMG!!!! SO YUMMY! Lobster wasn't in our budget, but shrimp and scallops were, so that's what I used. Be sure to use a deep lasagna pan, I used a 3 qt. 9 x 13 and couldn't fit all the noodles and spinach in it. Sauces are delish. Took the advise and made the Knorr alfredo (2 pks) but should have used one more. Will make again soon!

Chicken Cordon Bleu II

The family and I loved this! Great tip on wrapping the rolled chicken, cheese and ham up in saran wrap and chill a little, it stays put and no need for toothpicks which i find irritating to use.

Peppered Shrimp Alfredo

This was really good! Followed as written, but to make a little extra, I used 1# penne and used 1 jar alfredo,but to make a little more sauce I added another 1/2-3/4 c fat free half and half and extra romano. 2# shrimp and 1# regular mushrooms, quartered. Doubled garlic, red pepper as well. This made enough for 6 GENEROUS servings. Can't wait to make again!

Broccoli and Onion Casserole

I thought this was really good, but my husband came home and ate the rest of it! (That's his way of saying five stars!) Made as directed, but my only opinion is that the broccoli and onion DO NOT need to be boiled, sauteed or anything else. It cooks so long in the oven, the vegetables are perfect when they come out. I think any additional cooking time makes them come out mushy. Oh, I added garlic as well, because I can't make anything without it. YUM!

EXCELLENT! I think I dirtied every bowl I had, but that isn't necessary, I usually cook and leave baking to my Mom. Refrigerates/freezes well and I made the day before and was perfect! Must try!

Tex-Mex Patty Melts

Made as directed. Hubby loved them, but paid for it the next day. While we LOVE spicy foods, I would say I would leave out at least one of the chiles in adobo, and maybe the one in the mayo mixture. All three, plus the pepperjack cheese made them almost painful to eat. I use the chilies often, but always forget how potent they are afterwards. Other than that, the burgers turned out perfect and it was a good meal! Will try again, just modify the heat!

Caramelized Onion and Gorgonzola Pizza

This was wonderful!! I used 8 oz. of gorgonzola and everyone said I should have used half that and it would have been perfect. I substituted the other 8 oz. with a pre-shredded artisan cheese blend (mozerella and provolone) and added sauteed mushrooms (8oz) to the pizza as well. Will definitely make again, using 4 oz. of gorgonzola.

Slow Cooker Buffalo Chicken Sandwiches

This one is a for sure keeper! Easy and delicious. Use a good "sturdy" bun to pile the chicken on otherwise it can be a messy sandwich. I used a soft potato like roll, and while good, I had to finish up with a fork. It was worth it!

Chicken Fajita Marinade

Day Before Mashed Potatoes

these were pretty good, nothing special taste wise, but the idea of making the potatoes ahead on Thanksgiving Day and putting them in the crockpot to stay hot was genius! I will definitely do that again, and maybe add something to the potatoes to "spice" them up a bit.

Spicy Rapid Roast Chicken

Had 6 large bone in breasts, so I doubled the seasoning and removed skin first. After cooking them, I removed the meat and rough chopped it for salads, quesidillas, etc. for the week. Very tasty!

Super-Delicious Zuppa Toscana

WOW!! A keeper for sure! I used one hot and one mild sausage, ran hot water over meat while draining grease. Used fat free 1/2 & 1/2 all to make it a little less fatty. It was remarkable!
