Pumpkin Pancakes

Awesome! I "healthitize" it by replacing the vegetable oil with coconut oil and brown sugar with brown sugar sucanat.

Chicken and Dumplings III

This was delicious, however, I made some changes. I made my own cream of chicken, used 3 c homemade chicken broth and used leftover baked chicken (rather than boiling the chicken). I added about 1/2 c finely chopped celery, 1 c chopped carrots and 1 c peas. My dumplings turned out a little too mushy so next time around I'm going to make homemade dumplings and boil them in salted water prior to adding them.

Beef Stroganoff III

Crockpot version: chop 1 medium onion and 2 cloves of garlic. Place in crockpot with browned beef and add beef broth, mustard and 1 tbsp worcestershire sauce. Cook on low 6-8 hrs. I added cornstarch (dissolved in cool water) about an hour before done to thicken. Add 1/3 c each sour cream and cream cheese about 1/2 hour before done. Salt & pepper for taste. Amazing!!

Salmon Cakes II

Delicious, but I made a few changes. I used fresh, baked salmon and shredded it. I crushed 12 vegetable ritz crackers instead of the 1/2 cup of bread crumbs. I didn't have hot sauce so I substituted cayenne pepper. I rolled patties in parmesan cheese instead of flour and baked at 375 for 20 min. and then browned in pan for about 2 min. each side. Turned out amazing and we dipped in a mixture of horseradish and sour cream. Yum!

Ham, Potato and Broccoli Casserole

Excellent!! I just used sliced potatoes and layered the broccolli and ham cubes on that followed by the creamy mixture over everything and little shredded cheddar and there you go. Took about an hour on 375. Delicious!
