This is so good and so fast! I like that the recipe is a basic method. I added a little ground cumin and red chili powder. This recipe is perfect for those times when you don't really want to cook, but still want something yummy.

Dried Cherries, Pecans and Rosemary Brie en Croute

This is one of those easy things that looks really complicated when it is finished because it is SO pretty. I watched the videos and used the tip of cutting extra pastry dough into leaf shapes and arranging them on top. I took this to a party and everyone was very impressed and there was nothing left over.

Colleen's Potato Crescent Rolls

These are easy to make and absolutely wonderful. This will be my go-to roll recipe from now on. My brother said they are better than my grandma's rolls and that is extremely high praise. I found it easier to divide the dough into 4 rounds, roll out a 12 inch round, and then cut into 8 pieces. I really like being able to make the dough so far ahead of time. It made cooking Christmas dinner so much easier.

Chai Tea Mix

This is a wonderful recipe. I give it 4 stars instead of 5 only because the full amount of sugar is way too sweet. I reduced the sugar to 1 1/2 cups and it is perfect. If you use 1 1/2 cups sugar then this will make 1 full quart jar and just enough more to make yourself a test cup of nice hot chai.

Mini Pumpkin Butterscotch Muffins

These are great. The texture is perfect. I've made other pumpkin muffins that were too sticky. I baked these in a regular size muffin pan. I don't remember for how long...probably around 30 minutes.

Mushroom Blue Cheese Turkey Burgers

Absolutely delicious. The BEST turkey burger I have ever tasted. I used 1/2 cup of blue cheese crumbles before that's how much was in the pack I bought and just mixed in with the rest of the ingredients. I've made this recipe several times. I have tried it with regular white mushrooms, but I think the flavor is better with criminis (baby portobella).

Awesome and Easy Creamy Corn Casserole

I made this for Thanksgiving dinner. It was a big hit. VERY easy to make. I prepared it the night before, stuck in it the frig and then just baked it the next afternoon. It was exactly the same as when I baked it right after mixing.

Pumpkin Hummus

This is a great recipe. I incresed the spice to 3/4 tsp each and added a considerable amount of cayenne pepper. With these modifications, this is the best hummus I've ever had. I love the pumpkin flavor. I've made this twice in the past three months. The second time I doubled the recipe. Even without doubling, it makes a lot. However, it freezes very well. SOOOO much better than store bought hummus.

Golden Pork Chops

This is a great easy weeknight main dish. In the name of speed, ease, and fewer dirty dishes, I just put the chops in the baking pan then layered the remaining ingredients on top. I added a touch of dry minced garlic and used an 8 oz. container of crimini mushrooms. I'm sure this would be even better if you browned the chops first, but it was so good with my easy method that I doubt I will ever make the extra effort.

Chuck's Favorite Mac and Cheese

This is BY FAR the best macaroni and cheese I have ever eaten. Better even than my Grandma's and I didn't think that was possible. I was a little concerned about the cottage cheese, but WOW this is good!! This is now Stacey's favorite mac and cheese too!

Butternut Squash Soup

This is the second time I have made butternut squash soup. I must say that this version is much more appealing to be me than the cinnamon, ginger, clove, etc. version. I used neufchatel cheese instead of regular cream cheese to cut down on fat and it is still wonderful. I used 4 c. of chicken broth and the soup is a little thinner than I would like (but still delicious!) so I will cut down to 3 c. next time.

Ginger Snap Cookies

I'm giving this 4 stars instead of 5 only because they just aren't as good as my grandma's. This recipe makes a humongous amount of cookies. I will definitely half it next time. When reading other reviews I noticed people talking about the expense of candied ginger. It's really easy to make at home. Cook 1 cup pureed ginger and 3 cups of sugar over medium-low heat. After the sugar melts you can add some ghee (clarified butter, but regular butter will work too) and spices such as cardomom or allspice. Let the mixture boil for a few minutes while stirring constantly then pour into a shallow pan to set. YUMMY! We keep it on hand all the time for upset stomach.
