Spinach Dip with Water Chestnuts

This recipe is great! When I make it I cut the mayo to 3/4 and I use 16 oz of spinach rather than 10. My friends seem to like it better!

Chocolate Passion Bowl

I made this trifle for a New Years party and my friend who doesn't like fruit and chocolate together said that it was fantastic! Everyone else that had it really enjoyed it as well. I've had requests for it at other parties, a total hit!

Vegetarian Tortilla Soup

I thought this soup was REALLY good. I followed the suggestion of less chilies, but found that it wasn't enough heat for me. I added 4 cloves of garlic, used fresh green pepper and yellow onion (garlic pepper, and onion sauteed lightly before being added). I also added a can of black beans for protien, and instead of corn I used hominy, 2 cans (because it's what's used in posole). And instead of crushed tomatoes, I used stewed. The next time i think I might try to blend a bit of the soup and add it back in so it's not as chunky, but it's still delicious. I'm having it for lunch today!

Marranitos (Mexican Pig-Shaped Cookies)

I ended up only using 5 cups of flour - I don't think my mixer could have handled another cup. Other than that I used the recipe to a T. I think next time I'll only use 1 cup of brown sugar as I found these to be a little sweeter than the kind I'm used to - but at least I can have these anytime now instead of waiting until someone in the family visits or is visiting from Chicago!

Soft Sugar Cookies V

Finally! I found a recipe that is comparable to my grandma's sugar cookies! ... with a few changes. I don't know how much nutmeg I used, but I grated it in myself. I also added about a 1/4 tsp of cinnamon and about a 1/16 of all spice. I didn't chill it overnight - just left it in the fridge for an hour or so while I made another kind of cookie - then instead of rolling them out, I made about 1" balls and rolled them in a mix of granulated sugar and sugar in the raw - then baked them as is (not flattened) for about 11 minutes - transferring them to a wire rack after about a minute. They were very fluffy!
