Very good lasagna! I didn't let the sauce simmer for hours--no time for that. I made the sauce first and then had it simmering while I prepped the other ingredients. Then put it all together. It took me 1 hour. It worked out fine. I rated it 4 stars because I did change a few things. You have to put this in a 10x15 pan, a 9x13 is too small! Also I at least halfed the salt from 1 Tbs. to 1/4-1/2 Tbs. in the sauce otherwise it would've been way TOO salty especially once you add all the cheeses. I skipped out on the fennel seeds. If you like a saucy lasagna, I would add more tomatoes. The sauce ratio is perfect immediately out of the oven, but once it sits for a little bit or for leftovers I felt it was a little drier than I like. Overall, a very good recipe! Will make again with my changes.
