Baked Ziti IV

Reviewed: Jan. 31, 2012
We really enjoyed this. I ended up using two bottles of high quality (Barilla) spaghetti sauce and adding a little water otherwise it would have been too dry. I also put it in a 10x15 pan. I don't know how it would ever fit in a 9x13. Yummy, definitely a keeper.

Special Buttercream Frosting

Reviewed: Jul. 30, 2010
Very good. I halfed the recipe and used half butter, half shortening. Plenty for a cake mix and cupcakes.

Strawberry/Rhubarb Crumb Pie

Reviewed: Jul. 25, 2010
Very good. I added a couple of Tbs. of cornstarch to the mix. I had to cook it a lot longer. I finally turned it up to 375 to finish the job. Vanilla ice cream a must with it! Yummy

White Bean 'n' Ham Soup

Reviewed: Dec. 16, 2009
This was delicious! I added a ham bone I had from Thanksgiving. I also added a little liquid smoke and a little ketchup for more flavor. I also added a little cornstarch at the end for a thickening agent. Yummy! Will make again!

Ninety Minute Cinnamon Rolls

These are delicious! I used 1/2 white sugar and 1/2 brown sugar on the filling. I also used white bread flour instead of all purpose. Very yummy!

Apple Pie by Grandma Ople

Reviewed: Nov. 30, 2009
I'm not a huge apple pie fan but my family is. I added nutmeg and cinnamon. The only problem I had was I could not get the pie to bake on bottom. It had to bake a long time and by the time it was done the apples were soggy. Next time I will bake it on the very bottom rack. Maybe all the apples in it played in. I also put the apples through an salad shooter so they were thin. (A matter of convenience) although I like them chunky better.

Flourless Oatmeal Blueberry Pancakes

Reviewed: Nov. 7, 2009
This is interesting. It's a twist between an oatmeal breakfast cookie and a pancake. Very dense texture. I wanted a finer texture in our pancakes so I threw everything in the blender to turn the oats into a flour texture. I also only added 1 1/2 tsp. of cinnamon, and I halfed the oil and used canola oil instead of coconut. (that much fat and I'm going to eat it in chocolate!) I also added a little more skim milk. When you put it on the griddle I took a spoon and spread it thiner otherwise they are so dense they will just be doughy. Used frozed blueerry, thawed them and added them to the mix. I also crushed them into the dough. If you leave them as whole berries the rest of the dough has a hard time cooking because it's lumpy from the berries. On the whole it was good. Very filling. I would eat them just as a breakfast cookie. I'm going to try freezing them in baggies.

Spicy Bean Salsa

Reviewed: Oct. 4, 2009
Yummy! I added 1 can of kidney beans and cumin. I turned it into a chicken tortilla lime salad. Served it under tortilla chips and then the salsa, added chicken pieces (sauteed chicken with some lime and cumin in it.) Also added cheese, lettuce, and ranch, fresh limes.

Tuna Noodle Casserole from Scratch

Reviewed: Mar. 3, 2009
For tuna casserole this was pretty good. I added canned chicken instead of tuna because we're not tuna fans. I also doubled the sauce, and added Mccormicks powdered poultry gravy mix to the milk mixture for flavor. I also used Ritz crackers instead of breadcrumbs. Will make again. Thanks!

Hash Brown Casserole II

Reviewed: Jan. 28, 2008
Yummy! I only put 1/4 cup butter in the potatoes & 1/4 cup in the cornflake mixture to cut the fat. Also, I just sprinkled salt on the potatoes instead of adding a whole tsp. I added a little less than 1/4 cup of green onions. Next time I think I'll add the cornflakes at the end of cooking time so they're not chewy, but more crispy. Very yummy!

World's Best Lasagna

Reviewed: Jan. 25, 2008
Very good lasagna! I didn't let the sauce simmer for hours--no time for that. I made the sauce first and then had it simmering while I prepped the other ingredients. Then put it all together. It took me 1 hour. It worked out fine. I rated it 4 stars because I did change a few things. You have to put this in a 10x15 pan, a 9x13 is too small! Also I at least halfed the salt from 1 Tbs. to 1/4-1/2 Tbs. in the sauce otherwise it would've been way TOO salty especially once you add all the cheeses. I skipped out on the fennel seeds. If you like a saucy lasagna, I would add more tomatoes. The sauce ratio is perfect immediately out of the oven, but once it sits for a little bit or for leftovers I felt it was a little drier than I like. Overall, a very good recipe! Will make again with my changes.

Quick and Easy Alfredo Sauce

Reviewed: Dec. 17, 2007
This is a very good quick alfredo sauce for a quick dinner. I only used half the amount of garlic powder (it was plenty of garlic kick for us) and added some chicken. My kids really enjoyed it too. I served it with cooked veggies and broiled sourdough topped with fresh parmesan and parsley.
