Fennel Soup

Dee-licious! Very easy, followed the recipe nearly to a T, although I seasoned the soup immediately after adding the broth (light garlic powder, salt, black pepper) and used a hand blender to cream it up a bit. One pot, few ingredients and fast for an impressive soup!

Roasted Kohlrabi

Excellent side dish and easy use for kohlrabi. I was specifically looking for something new to do that wasn't a slaw or soup. I Cut up a new potato, coated in the mixture and baked along with the kohlrabi to have a little texture diversity. I also washed and sliced up the kohlrabi leaves, sauteed them in a combination of olive oil, white cooking wine and soy sauce and WOW! This was all a side to my pan-seared tilapia tonight and I'm still in heaven.

Banana Apple Muffins

I give my version 4 stars. The first challenge in perfecting the recipe is the oat texture -moisture, moisture, moisture. I first mashed my banana and grated my apple, set it aside in a bowl. As I started to prep the rest of the items, I noticed a decent amount of fruit juice collecting. I poured that over the oats as they sat in a different bowl, allowing the oats to begin softening and absorb flavor. Second challenge is flavor and creating more without ruining the nutrition of the muffins. I sprinkled a tad bit of sugar and a decent amount of cinnamon over the prepped fruit. You should easily double the cinnamon and allspice - no real impact in doing so. I also used vanilla flavored soy milk in place of regular milk (and added an extra teaspoon than what was called for). I also added a teaspoon of vanilla flavoring. After I combined the liquid ingredients with the dry, I let it set for about 8-10 min to allow the oats to absorb. Then I folded in the fruit. They came out perfect! They easily came out of my muffin pan and tasted delicious. The only reason I don't give this higher than 4 stars is because I think it needs just a little more apple and banana; and I'll be sure to add that next time!
