Kale and Feta Salad

We're growing so much kale this year we are trying 2 new recipes a week. This is our favorite. So easy and refreshing and healthy! You won't even miss the lack of dressing, as the salt massage and apple cider vinegar give it just enough flavor. Didn't have currants or pine nuts so substituted dried cranberries and chopped almonds instead. Still delicious! Still great on day 2...cider kept the apples from turning brown.

Kale and Quinoa Salad

Love Mussels

Great way to jazz up regular red sauce by sauteeing the capers, shallots, and garlic first. The red pepper flakes gave it a terrific kick. I used pre-cooked, frozen mussles that made the recipe even easier and still delicious! So quick and easy and still yummy!

Rhubarb Sour Cream Pie

I made this with 2 cups rhubarb and 2 cups strawberries, then poured the sour cream mixture over it. I also added some oats to the crumble topping for more texture. It was delicious!! All of the guests said it was the best rhubarb pie they had ever had!

Kabob Marinade

This was delectable on the meat, but I didn't like it on the veggies very much (Ithink it was the mustard on them I didn't like). Marinated the meat in it overnight and it was so tangy and delicious!

Herbed Potato Soup

This was so easy--we made it while camping! I added chopped carrots and celery, as well as some cayenne pepper. We just pre-cut all the ingredients and threw them in the pot accordingly that night. Everyone was amazed how good it was and wanted 2nds. (and 3rds if we had had any left!)

Cranberry-Almond Apple Pie

This was so delicious and a great way to use all those left over cranberries at Thanksgiving. The almond crumb crust creates the perfect kick to go with the apples and cranberries. The result was a tangy mixture--both sweet and tart at the same time depending on which part of the bite you were focusing on. All my guests loved it and asked for the recipe.

Herb Turkey Rub

This was perfect and super easy. I have used it to roast turkeys and chickens, and simply rubbing it under the skin and all over the outside and then letting it marinade for a bit will make your turkey come out moist, seasoned and tender with a nice crispy skin. Delicious!
