Karyn's Cream of Crab Soup
WOW! This was a nice treat for this seafood loving single Mom who has no time to cook! It is absolutely delicious! I did change things up a little though: I melted the butter, then added 2 minced shallots and a clove of minced garlic and cooked until soft. After that, I added the hollondaise/flour to make a roux, before adding the half & half. Other than that, I pretty much made it according to directions, other than only using 2 TBSP of Old Bay (GOOD CALL - 3 would have been too much, IMHO). Plus, I added a little fresh chopped parsley and a little extra sherry. YUMMY YUMMY YUMMY! I'll make this again and again!

Broccoli Chicken Divan
I definitely wanted to alter this recipe to add more flavor, because as-is, it looked like it was missing a lot. I used Campbell's Chicken with Herbs soup intead of Cream of Broccoli, and added about 1/2 cup (maybe a little more) of sour cream, about a tablespoon of Mrs. Dash Original, about a tablespoon of McCormick Lemon & Herb Seasoning and about a teaspoon of poultry seasoning. Per another review, I also added cheddar to the sauce and doubled the bread crumb mixture. I served it over rice. PERFECT! Will make again and again!

Seared Tuna with Wasabi-Butter Sauce
This was absolutely incredible!!!!! I will make a few minor changes next time - add a little more wasabi, use less butter and add some cream to the sauce. Also, tuna should be seared on HIGH heat, not medium-high. This was some of the best tuna I've ever had - thanks for the recipe, Darla!
