Banana Chai Bread

This is a pretty good banana bread. It wasn't as moist as I had hoped, even though I added extra banana (used two). For those of you wondering about the chai, I had a dry package of Oregon Chai. I added 1/4 C boiling water and let it cool a bit before adding it. I also squished the cream cheese/egg mixture in a ziploc bag and added it from that to the dry ingredients...one less bowl and I think it mixed the cream cheese better than I could by hand. Thanks for a pretty good recipe...I'll probably make it again:)

Extra Easy Hummus

Other than my blender SUCKS, so the texture isn't that smooth, this is awesome hummus! Definitely something I'll make again...as soon as I get more pita bread!

A Baker's Secret for Bread Machines

This is the first bread to work in my second hand bread machine that didn't come with instructions. It needs a little more flavor. I added 1T sugar and 1T dry buttermilk. I'll make it again!

Crab Quiche I

Pretty tasty! I used refrigerated croissant dough cut into squares for the crust and put the mix into the crusts in muffin tins. I also added quite a bit of Old Bay seasoning. It needs a little more spice. I'll make it again!

Good Old Fashioned Pancakes

Like others, I decreased the amount of baking powder. I also added a little lemon juice to the milk to sour it (if I had buttermilk I would've substituted it). After mixing it all up, I let it set for about fifteen minutes and then thumped it once on the counter before starting to cook the pancakes (it's a trick my friend taught me--he makes the most amazing, fluffiest pancakes in the world!). Very fluffy and tasty!

Chocolate Lovers' Favorite Cake

This cake was fantastic! I melted the chocolate chips with the butter because I didn't want a lumpy texture. I also used fat-free sour cream and pudding...and you can't tell I did! I don't have a bundt pan, so I put it in a 9x13 cake pan and cooked it for about 45 minutes. Next time I might add an extra couple teaspoons of cocoa to the mix. I also used a milk chocolate frosting. People loved it!

Caramelized French Toast

This is sooooo good!I added some cinnamon, nutmeg and allspice to the French toast mix (like my usual recipe) and added toasted almonds before adding the toast to the caramel mixture. I will definitely make this again very soon!

Almond Chicken Casserole I

This was sooo yummy! I added a box of frozen chopped broccoli and 1/2 C. shredded cheddar cheese. I also used Rice Krispies for the cereal topping! I'll be making this a lot! I also used low fat sour cream (instead of yogurt), mayo, and cream of chicken soup. Thanks for the great recipe!

Yummy! I used frozen roasted veggies...zucchini, yellow squash, red pepper, and sweet onion and added a potato and a pinch of herbs (that's the name on the bottle). Fantastic easy soup! Thanks for the recipe!

Asparagus with Parmesan Crust

Very simple, quick, and an amazing combination of flavors! A little minced garlic is also pretty tasty. I marinated them for about an hour in olive and balsamic vinegar before putting them in the oven and it tasted wonderful...no need to wait to put the vinegar on after they come out of the oven! I love this recipe...it's almost the only way I make asparagus!

Rice Cereal Energy Bars

These are good...probably better if I followed the recipe closer! I used Splenda in place of the corn syrup and sugar and found a trail mix with sunflower seeds, papaya, apples, raisins, cranberries and nuts. The only change I'd make to the way I did it is to add corn syrup instead of making the simple syrup... I also heated up the peanut butter mixture on the stove. I'll probably be making these often! Thanks for a great recipe! It's so versatile!
