Kevin's Sea Shells
made ahead, froze (and kept it frozen in the bottom of a good cooler) and then "baked" over a campfire. it was amazing. we ate like queens in the middle of nowhere!

Raspberry Almond Kiss Cookies
thanks m.e. blevins and other reviewers. used kisses w/ almonds and - after reading other reviews of hard, dry cookies- added an extra egg yolk to help make the cookies a little softer. try it, it works. throw the "frosting" in the fridge for a bit for neater piping. these cookies make me happy:-)

Baked Ziti I
ok...this is not what i'd call a "fast" dinner for a weeknight...i'm sure this is not traditional...and i have eaten better similar food in my life...BUT when considering a balance between all of those factors (and throwing in affordability) this recipe gets 5 stars as written all the way. husband gave it 5 with no disclaimers. love the sour cream...ricotta gags me b/c (even though it is actually good) it grosses me out due to the pasty texture upon preparation. the only change i made was to add a small container of shrooms chopped pretty finely so DH wouldn't notice. they needed to be used and i love them in nearly everything. great recipe. thanks! will probably replace mom's mosticioli (sp?) recipe...but don't tell her!!!
