Homemade Albondigas Soup

This was delicious. After reading the reviews I decided to add 1/4 cup uncooked jasmine rice to the meatballs. I also added 1 jalapeno to the soup. I think I cut the potatoes too small because they pretty much fell apart when I stirred the soup to serve it(I cut the potato in half lengthwise, then half again lenghtwise and then in 3 cubes...they were pretty big but I guess not big enough). I would cut the potatoes larger next time and maybe boil the meatballs in a little bit of water before adding to the soup (some of them fell apart as well). The soup was delicious though! Great left over as well.

Cherry Crunch

Delicious. I made it for a friend who had knee replacement surgery, my Mom made the dinner and I made the dessert - I gave them a small pint of vanilla ice cream to go with the dessert. I changed a few things based on reviews: I used 1/2 cup plus 2 tablespoons of soft butter, I used 1 cup of brown sugar and added 1/2 teaspoon of almond extract to the cherries. It was great - and I don't normally like cherries.

Chewy Peanut Butter Chocolate Chip Cookies

These are sooo delicious! I have made them twice now and they disappear so fast. Based on other reviews I made the following changes: I used 1 cup of peanut butter, honey instead of corn syrup, 1 1/2 cups of chocolate chips (the first time I used the full 2 cups, but it was just too much, there were extra choc. chips at the bottom of the bowl that wouldn't mix w/ the dough). I baked at 350 for about 14 mins. They are great the next day - they stay perfectly soft if you put them in an air tight container. I had several people beg me for the recipe :p

Fry Bread Tacos II

This was delicious. Keeping the oil temperature at 365 is important so that the bread doesn't soak up the oil. I followed hwiggins review on what to top mine with...chuck roast in the crock pot and the beans...delicious!! I heated up the left over bread the following day in the oven for about 10 mins at 400 and it was just as good!

Grandma's Green Bean Casserole

This was delicious! I have never had the other popular green bean casserole, so I can't compare the two, but everyone in my family was telling me not to waste my time making a green bean casserole with our Turkey dinner...but once they tasted it, everyone went back for seconds or thirds! I made a few changes: I only used 3/4 cup of sour cream, I mixed 1 cup of cheese in with the green beans and mixed the other cup with some french fried onions in the can for the topping (I did not use the cracker crumbs at all). I also sauted the onions ahead of time in the butter and added a handful of french fried onions in the bean mixture too. Delicous!!

Mom's Zucchini Bread

Very good! I did as other's suggested and used half oil, half apple sauce...2 cups of sugar total (half white and half brown)...added a pinch of nutmeg...pecans instead of walnuts...and used 3 cups of zucchini. The bread took about 10 mins longer to cook than the recipe stated (and I increased the oven temp by 25 degrees). Will definitely make again.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Delicious. I marinated for about 5 hours. It took longer to cook - about 28-30 minutes total - and it was very moist! I didn't have parsley, but I didn't miss it. I used my husband's "Dave's Insanity" hot sauce..I only used a few drops because it's so hot, and it added a nice kick, but not too much. Will definitely make again.

Coconut Cream Cake I

I made this cake for my mother who loves coconut cake. I have been trying many different recipes. My Mom LOVED this cake. She was going to take most of it to work because she didn't want to eat the whole thing, but after trying it she decided to keep it all to her self (well she shared three slices with friends). When I told her there was one more recipe I wanted to try, she said why bother? This was the best coconut cake she's ever had. I did make one adjustment...I only used about 3/4 - 1 cup of the coconut milk/condensed milk mixture. It would have been WAY too wet if I had added it all. The cake still turned out very moist and dense. I would like to try this as a layered cake next time, but not sure how that will work out because of adding the liquid to the layers might make it too heavy.
