Homemade Albondigas Soup
This was delicious. After reading the reviews I decided to add 1/4 cup uncooked jasmine rice to the meatballs. I also added 1 jalapeno to the soup. I think I cut the potatoes too small because they pretty much fell apart when I stirred the soup to serve it(I cut the potato in half lengthwise, then half again lenghtwise and then in 3 cubes...they were pretty big but I guess not big enough). I would cut the potatoes larger next time and maybe boil the meatballs in a little bit of water before adding to the soup (some of them fell apart as well). The soup was delicious though! Great left over as well.

Cherry Crunch
Delicious. I made it for a friend who had knee replacement surgery, my Mom made the dinner and I made the dessert - I gave them a small pint of vanilla ice cream to go with the dessert. I changed a few things based on reviews: I used 1/2 cup plus 2 tablespoons of soft butter, I used 1 cup of brown sugar and added 1/2 teaspoon of almond extract to the cherries. It was great - and I don't normally like cherries.

Chewy Peanut Butter Chocolate Chip Cookies
These are sooo delicious! I have made them twice now and they disappear so fast. Based on other reviews I made the following changes: I used 1 cup of peanut butter, honey instead of corn syrup, 1 1/2 cups of chocolate chips (the first time I used the full 2 cups, but it was just too much, there were extra choc. chips at the bottom of the bowl that wouldn't mix w/ the dough). I baked at 350 for about 14 mins. They are great the next day - they stay perfectly soft if you put them in an air tight container. I had several people beg me for the recipe :p
