Fried Pork Chop
I had thawed pork chops and 40 minutes to make dinner. This recipe was great as it was quick. The taste was simple, not a whole bunch of various flavors (which I like), the chops were juicy and tender. Thanks!

Oaxacan Tacos
These are quite yummy. I also use left overs from pork roast. Dice it up and heat in a hot skillet with 2 tablespoons of oil to brown up the edges of the already cooked meat. I prefer my corn tortillas grilled without the oil. Use a hot non-stick skillet and just lay the corn tortilla in it without oil or cooking oil spray. Cook for a couple minutes until starting to brown, flip tortilla over to brown the other side. "Cooks" the corn in the tortilla without adding oil to it. Yummy!

Broccoli Chicken Casserole I
Seemed a bit rich with so much meat in it. So, next time I am going to half the meat and increase the broccoli by 50% more. I also added a can of sliced mushrooms to mine as my son and I like them a lot. Thanks for sharing this recipe. I've been in a slump for what to cook and this one inspired me!!!
