Peppery Scalloped Potatoes

These are amazing! I have used cream of chicken and cream of celery soup and both are great. I use pepper jack cheese.

Simple Herb Rice

This was really good and quick to make. I used a whole onion and left out the sage since my husband doesn't like it. It still had nice flavor with out it and complimented our pepper fish really nicely.

This was amazing. Very flavorful. I halfed my recipe and saved some of my leftovers for next time. This went very well with grilled potatoes and onions.

Grilled Potatoes and Onion

This were really good. I messed up and wrapped one potato in only one thing of tin foil. I also seasoned with minced garlic, dried dill, and dried, parsley in addition to the salt and pepper.

Debdoozie's Blue Ribbon Chili

I have been searching for a while to find a good chili recipe and I found a keeper. I used McKormick's chili seasoning, 8oz of pace medium picante sauce, 2 1/2 cups of tomato sauce in addition to a can of diced tomatoes and green chili. I added a little bit of minced garlic and omitted the salt.

Chicken and Broccoli Alfredo

This was really good and quick to make. Couldn't taste the mushrooms in the soup. 1/4 tsp of pepper is a lot so I only seasoned to taste. I have made this with regular cream of mushroom soup and reduced fat. The reduced fat tasted just as good so it is worth the switch!

I made this with fresh garden tomatoes first and boiled them. Had to add a lot of extra seaoning since it seemed a little bit flat. Still thought it tasted great.

Salsafied Chicken and Rice

Thought this was great. I made my chicken bite size and sauteed yellow onion while browning the chicken. I used picante sauce since it was all I had. In the future I would like a little more chunchs of tomatoes so I may chane to a regular salsa.

Hot Bean Dip

This was really good. I used light cream cheese and reduced fat sour cream. I added about 3.5 oz of green chilis and a little bit of cayenne pepper. I love green onion so I add a little extra. I only had one can of refried beans so I mashed a can of pinto beans. Added less cheese and replaced the monteray jack with pepper jack since it is all I had. This did make a ton when serving with a ton of apetizers but would have been gone easily if this was the main apetizer. Will make this again.

Black Bean Pasta

This is a good recipe that you can tweak to your liking. My dad makes this with sauted jalapenos and it does give it a nice flavor. It is very good warm.

Fish in Foil

My husband loves this recipe but I haven't tried it with jalapenos yet. I have used green peper and/or red/yellow pepper since it was all I had on hand. I have only been able to use lemon juice instead of fresh lemons and it is still awesome.

Cod with Italian Crumb Topping

This definitely met my need for fish and chips. Even thought it's not the same it still tasted really good and is better than being fried. I did not use cornmeal and used egg substitue instead of the egg white since I had some in the fridge. I took others suggestions and baked on a wire rack in a cookie sheet so it would not be soggy on the bottom. Broiled a little extra time for crispness.

Too Much Chocolate Cake

This is probably the best chocolate cake I have ever had. This was a big hit. I made mine with fat free sour cream, egg substitute, and applesauce. Used mini chocolate chips as recommended. There is no need for frosting. Just zap your slice in the microwave to melt the chips before eating and serve with a nice cold glass of milk.

Delicious Ham and Potato Soup

This soup is so good and I love that it doesn't take all day to simmer. The bulk of the time for cooking takes preparing the veggies and potateos. I used skim-milk and put in more onion and celery then called for. If making this soup for more then just my family of four I would definitely double it since it doesn't leave a lot of left overs. Thanks for this amazing recipe.

Slow Cooker Lentil and Ham Soup

This was ok. My husband seemed to really like it. I liked the flavor a lot but did not care to much for the texture of the lentil beans. It was my first time trying them and I much prefer regular ham and bean soup.

White Bean 'n' Ham Soup

This was my first attempt at Ham and Bean soup and it was amazing. I doubled my recipe by mashing 2 cans of beans and used 2 full cans of beans. I had a left over ham bone which I simmered for about an hour in the chicken broth. I will not use as many chicken broth cubes the next time it did turn out a little salty and there was enough salt being pulled out from the ham. I used olive oil to saute my veggies. I did not have white pepper but I think it turned out fine with regular black pepper.

Tortilla Rollups II

I made this with reduced fat cream cheese and reduced fat sharp cheddar. I had left over 6 inch tortillas and they used it up nicely. My husband said that he still likes the party pinwheels better since these seemed a little bland but I liked them and so did my toddler.

Chocolate Trifle

This scored in at a 4.5 by my hubbie. Made this for a dish to pass at a super bowl party and went over well. I used reduced fat brownie mix, fat free cool whip, fat-free sweetened condensed milk. I drizzled a little bit of carmel topping on the layers of brownie (a little will go along way) and crushed up a few heath candy bars and sprinkled them on the brownie layer for extra crunch. This is very rich but definitely hits the spot for chocolate lovers! It filled up my trifle bowl to the top.
