Spinach Pancakes

Frozen Spinach is a staple in our house, convenient and healthy. I would have never thought to make something like this until I saw this recipe. They were so easy to make, used basic ingredients that we always have on hand and quite tasty.

Savory Corn Muffins

The only substitution I made was using regular milk instead of buttermilk, added chopped jalapenos (yum!) and less salt as everyone suggested. These muffins were good, but not great. We ate them all with chili, but I wouldn't try this recipe again.

Chewy Chocolate Cookies II

I chose this recipe only because it was the only one I could find with ingredients I had on hand. VERY GOOD! I used butter instead of margarine and pecans instead of walnuts. They do taste a bit like brownies. Chewy and rich!

World's Best Scones! From Scotland to the Savoy to the U.S.

Excellent! My husband said they were the best scones he'd ever had, and he's British! I left out the raisins and substituted plain yogurt for the sour cream. Perfect for afternoon tea.

Easy Dutch Oven Cheese Lasagna

Dutch Oven Lasagna is one of my all-time favorite things to cook. I think this recipe isn't perfect but it gives you the idea. I make up a proper Bechemel sauce with butter, flour and milk and then add ricotta cheese. So cheesy! I've never been a fun of broccoli and cauliflower in a lasagna, so I use bell peppers, onions, mushrooms and any other veg that looks good. Also you can add meat if you are so inclined. I only put in on the coals for about 30 -45 min. Letting a lasagna stand is key so don't rush it.

Spinach Dip with Water Chestnuts

I've made this twice now and people are so impressed. I leave out the water chestnuts because I can't find them at the shop. I'm thinking next time I will add some cut up artichoke hearts just to make it different.

This is exactly how I make it and how my mother made it too! Always reminds me of summer in Oklahoma as a child. The only difference is we serve it cold and add an onion.

Shepherd's Pie Mexicana

I made this vegetarian by substituting fake meat and a can of baked beans for the meat. Also my husband sprinkled the top of the mashed potatoes with corn chip pieces to give it some crunch. It was excellent!
