Blueberry Cream Muffins

This recipe was lovely. I cut my recipe in half to only make one pan of 12 muffins. I did not half the salt and baking soda but kept them at 1 teaspoon each. I used frozen blueberries and felt this recipe did not require extra sugar as some others have suggested. I think any extra sugar would have been to sweet for my families tastes. If you are using good quality vanilla and fresh good quality eggs this recipe does not need any extra flavor. Any other flavor additions would wipe out the lovely blueberries. I will be using this recipe in the future as my go to blueberry muffin recipe. Very yummy!

Best Toffee Ever - Super Easy

This is amazingly tasty and super easy! I am accustomed to cooking caramel and other candies that require constant stirring. I think I over stirred mine and it did not get as brown as it should have. It was fantastic either way!

Old Fashioned Apple Dumplings

These are wonderful. The sauce is a little on the sweet side so instead of serving with Vanilla Ice Cream we served with half n half or cream. The non sweetness of the cream balanced everything out. I will definitely be making these again!

Banana Sour Cream Bread

I made this with a few alterations. Used 1 cup butter instead of 3/4 cup and 16 oz. of plain whole milk yogurt instead of 16 oz sour cream. I also added a few dashes of ground cloves. I am going to be passing this on to the Mother-In-Law to test out.

Delicious Ham and Potato Soup

This was a very good foundation for an amazing soup. I made quite a few additions, but started from this one. I doubled the entire recipe, adding garlic, leeks, and celery. I used homemade chicken stock and deglazed with a nice white whine after caramelizing both the ham, onion and garlic together, after the potatoes had cooked I removed 1/3 of the soup and pureed it giving the entire soup a nice thick creamy texture. I also used cream instead of milk. I spiced it up with some cheyenne, and was heavy on the pepper. I will definitely use my version of this recipe again it was wonderful!

Best Peanut Butter Cookies Ever

These are amazing. I used half crunchy half creamy peanut butter....After reading reviewers who state they had crumbly batter I can't help but wonder if they are using peanut butter that happens to be refrigerated. If so maybe next time use room temp, and for those who have cold peanut butter let it warm up so the oil becomes liquid rather than solid.

Scalloped Cheese Potatoes

This was great! Very decent basic and simple recipe. I added extra cheese, salt, pepper, cayenne, and celery, onion, and garlic sauteed with butter to accommodate our tastes. Will definitely be making this again!

Bob's Habanero Hot Sauce - Liquid Fire

We made this tonight. It was fantastic. I gave only 4 stars because it was not as hot as I had expected. Here are the changes we made to accommodate our tastes. We roasted 1 head of garlic and added the cloves to the blender. As other reviewers suggested we lessened the molasses, mustard, and brown sugar to 1/3 cup each. We also added 4 Long Peppers for some added flavor. Overall we love this sauce and we will continue to use this recipe.

Mama D's Italian Bread

I have been having terrible luck lately with my bread. It keeps coming out extremely dense. I don't know what I am doing wrong. I am going to keep using this recipe though, the flavor of the actual bread is great! It just isn't what "Italian" bread should be. I think it is something in my process and nothing lacking in the recipe itself.

Sam's Famous Carrot Cake

This was my second time making carrot cake and I was quite pleased with the outcome. Neither myself nor my man are carrot cake fans, so the real test will be when I make one for his father who is. I left out the nuts and coconut. I also used 1 cup milk and 1 tbsp vinegar for buttermilk substitution. I also added about 1/2 a tsp freshly grated nutmeg along with the cinnamon.

Cube Steak Parmesan

Chewy Caramel

I wanted to comment because I think some reviewers are not quite accurate in their information. 1 pound of brown sugar does not in any way equal about 1 1/4 cups. If you will notice a 2 pound bag of sugar you buy from most any grocery store notes that it equals about 4 and 2/3 PACKED cups. I hope this helps future confectioners!

Blueberry Buttermilk Coffeecake

You do not have to lower the amount of baking powder, you will end up with a flat cake if you do. The "metallic" taste you are referring to is poor quality baking powder. I would recommend you find one that does not contain aluminum, the Rumford brand is carried in almost all grocery stores and does not contain aluminum.

Broccoli Chicken Divan

For what it was we thought it was pretty decent. I made some changes. I doubled the recipe to start, used one can Cheddar Cheese soup, one can Cream of Broccoli, and about 1/2 to 3/4 cup of sour cream, I did not cook the broccoli before hand, I also seasoned the chicken with garlic salt and pepper while i cooked it. I mixed in some dried onions as well as French's fried onions and topped the whole thing with Cheddar Cheese and French's Fried Onions. Baked for about an hour at 400 and served over plain rice.

Whole Egg Mayonnaise

This is a great recipe if you are concerned about wasting the egg white. I have made this recipe using all kinds of oil and my favorite is regular vegetable oil. I would not recommend using Extra Virgin Olive Oil, as it lends to much flavor to the end result and can give your mayonnaise an almost bitter note. Like others I have split the acid using 1 Tablespoon White Vinegar and 1 Tablespoon Lemon Juice for a nice addition to the flavor, I also added an extra 1/4 teaspoon of salt. Also, like many others suggest, I use my immersion blender and add all the ingredients to a quart mason jar and start at the bottom and blend up. It is amazingly effective and mess free.

Too Much Chocolate Cake

I was very disappointed when I tried this after following the recipe exactly. I made it yesterday for my boyfriend's birthday cake. He wanted a super chocolaty cake without frosting. I thought this would be perfect. If you are looking for something that tastes like a box then this is it, but I was looking for something a little more sophisticated. Even my boyfriend said it was just So-So... I will not make this again.

Homemade Maple Syrup

After making pancakes for breakfast I realized I didn't have any maple or pancake syrup left. I tried this recipe. It was as expected. It tasted much like dark corn syrup. It resembled nothing of maple syrup or even the store bought pancake syrup. In a pinch it sufficed, but I will probably not make this again.

Easy Sugar Cookies

I'm not sure what I did wrong, but I am an experienced cookie maker and these turned out horribly. They were flavorless, way to sweet, and the most bizarre thing.. they flattened into thin crispy nothingness! I will not make this version again.
