You can use any kind of veggies on hand, which is the beauty of this recipe! Didn't have any beans so I added peas, corn, extra garlic and more spices - cumin, red chili flakes, chili powder and basil (because I LOVE some heat!). It's better to use smaller pasta and don't leave out the Parmesan, it really gives that extra oomph :)

Bob's Mexican Stuffed Chicken

AMAZING!! My boyfriend said I need to make it every week and it's going in our family "must-have vault"! I substituted corn flakes for Panko and made fresh salsa. I added ham inside and boy, it was phenomenal. I butterflied the flattened chicken and it cooked to perfection. Must make!

Lentil Soup with Lemon

Super easy, used canned lentils and shredded the carrot and it took literally minutes to cook. Didn't have garlic but would definitely add it next time. Love spice so added more chili powder and some chili flakes. Don't overdo the lemons like I did!

Slow Cooker Vegetable Soup

GREAT with a couple of additions/changes. 1) Didn't do water, used a whole carton of beef broth instead 2) added MORE veggies than written including some uncooked beans 3) added a lot more spice including chili flakes (as I like zee spice!), garlic powder, bit of cumin, parsley and a bay leaf. Soooo good!

Stuffed Peppers with Turkey and Vegetables

This recipe was AWESOME and so healthy! Used red & orange peppers instead and added a bit more seasoning & spice to the mixture. Served at a potluck and was a total hit - thanks!

I was skeptical about this recipe, but so good and different! Needed to add more cabbage & celery, as the sauce is a pretty strong flavour. Delish!!

Denise's Peanut Chicken

I would suggest adding more veggies (brocoli, bok choy, zuccini) and more garlic to this dish. Was delicious with rice noodles - limit the peanut butter as needed. Was a bit runny but very delicious!

Roasted Red Pepper and Tomato Soup

So good! Can't eat wheat, so added a little bit of corn starch to thicken it up. Also added a bit of tomato paste for flavour as we used 8 peppers. Took a long time to make to worth it!!

Quick Chicken Stew

Great recipe but needed a lot more spice to make it interesting. Added potatoes and corn to thicken it up a bit so you don't need rice or pasta to make a meal. Will make again!

A Pad Thai Worth Making

My first time making Pad Thai and a very straight-forward and deicious recipe to follow. Needed a bit more spice, but easy to add after! Great with chicken skewers and peanut sauce.

Spinach Lentil Soup

I was always hesitiant to cook with lentil as I always thought they were so tasteless. NOT this recipe! Rave reviews from my roomates - added a little garlic and some chile powder just because I can`t live without either of those ingredients! Will 100% make again.
