Lana's Sweet and Sour Meatballs

Still the best sweet and sour meatball recipe ever! Need a fast dinner? Use the sauce recipe with store bought meatballs and use frozen bell pepper slices. The sauce is great over chicken too. HINT**Don't add any salt to the sauce until after you have added the soy sauce. It can make a big difference! I had never thought to cook meatballs in the oven before, this works great!

Clone of a Cinnabon

Very easy to make even without a bread machine. Nice, simple recipe-I had all the ingredients I needed in the pantry. It did take a lot longer to rise than the recipe stated (about an hour for the second rise). I had to use the warm oven trick too. The icing tastes just like Cinnabons! Mine turned out "picture perfect"!

Dark Chocolate Cake I

Very easy, very chocolaty! I had all of the necessary ingredients in my pantry. Makes enough batter for one half sheet cake. I will make this again, my family loved it. Fun to make with kids!

Thai Curry Soup

Fantastic! I had to use red curry sauce, I didn't have any paste but it turned out fine. It tasted like something you would have at a quality Thai restaurant.

Southern Green Beans

You will love this! I followed the recipe closely except for adding a bit more chicken broth which steamed the potatoes and beans to perfection. Like others have noted, it did need to cook longer than 10 minutes. Do not use canned green beans, stick to fresh for this one. In fact, I wouldn't substitute or leave out ANY of the ingredients as the flavors came together perfectly. A good balance of veggies, bacon, and seasoning-I wouldn't change a thing. This is a new family favorite, I can't wait to make it again!

Slow Cooker Latin Chicken

Perfect as written but also easy to customize! You can control the spiciness by the salsa you use, mild to extra hot. Remove the chicken skin for a lower fat option. Sneak some corn, carrots, or other veggies into the pot, your family won't notice! Add more chicken broth (it can be a bit dry), especially if you choose to bake it rather than using a slow cooker. I've also made is using a whole cut-up chicken rather than thighs and it turned out just as good! Boneless/skinless breasts might be a little lean for this (and easy to over cook), but I bet it would still be tasty! Has anyone tried it with turkey?

Grilled Salmon I

Simple, elegant, perfect! I wouldn't change a thing but you could easily add your own favorite herbs and spices. I used this for a Copper River salmon filet, marinating it for about 3 hours. I broiled the fish skin side down on a pre-heated pan for about 8-10 minutes. To die for!! It flavors the fish without overpowering it. Just a hint of sweetness from the brown sugar. Even though salmon is expensive (our three large servings cost $13) it's still cheaper and so much more nutritious than fast food! Including rice, veggies, and dessert, the entire meal was less than $20 for three adults!
